Herbs Aplenty

So last week, I bought a few packages of fresh herbs for the express purpose of making my beloved Hemp Herb Hummus. Well, that recipe required all of three tablespoons, so I’ve found myself with an abundance of herbs over the past several days. What are your favorite ways to use fresh herbs? Currently I have some chives, cilantro, and sage on my hands that need to be used up, pronto!

I have two midterms tomorrow, so let’s get to the food already:

My inner granola monster continued to beckon this morning. This time I opted to top my oat bran with Apricot Granola Delight. I love me some hazelnuts + apricots.

After mucho studying, I took a trip to Whole Foods, where I indulged myself in a package of fresh strawberries. Despite the fact that it’s barely March, these berries were perfect—a nice reminder that spring will eventually arrive…

Dinner time arrived before I knew it, and my stomach was demanding food faster than I could think of what to prepare. Hence, tonight’s somewhat haphazard dinner combination. PS That’s an Okara burger lurking beneath that glob of guac.

Alright, I am off to put the finishing touches on studying. Stay tuned tomorrow—I have a big announcement about spring break:)

  1. Broc!! Get your strawberries from Quenchers!!!! Best way to use those 1600 food points. They have perty dark red ones too.

  8. Yummy meals you had Caroline, love the looks of your sweet potato fries!
    You know, sage goes really well with butternut squash, you could roast some and sprinkle with sage on the last few minutes!
    Cilantro is good with all things Mexican, or at least I think, and chives, well chives would be great on scrambles tofu! I like chives a lot, they go well with almost anything and when sprinkled on top of foods it makes it all look pretty!!

  11. Sweet potatoes might be nice roasted in an oven with your fresh sage, other wise add your cilantro and chives to all of those fabulous looking curries that you’re always making!

  12. I bet they would go well in tofu scrambles. Or make some savory dips with Fage (like tzatziki). I freeze fresh herbs- just chop and freeze in an ice cube container then you have perfect portions whenever you need them!
