I’m Still Here!

Hello all! I apologize for my abrupt hiatus from the blogging world. Although I finished my exams on Tuesday evening, I stayed in Durham for a few extra days to celebrate with Seth. As of Wednesday morning, he officially has a master’s degree, so I’ve spent the past few days flouncing about town with him.

Anyway, I am now back in Birmingham, with a mish-mash of pictures to share with you. While Seth is aware of my blogging activities, I still feel a little awkward taking pictures of my food in his presence. As a result, my meal documentation has been “incomplete” in recent days. Regardless, I did manage to snap a few shots, both of my eats and of me with the boy. Here is sampling of the pictures we took while walking through the Duke Gardens yesterday:

Tuesday

For the first time in what seems like ages, I got the opportunity to indulge in some smoothie/blog-reading time.

Wednesday

As indicated by the precise placement of my banana slices, I take food presentation to the extreme occasionally. Oops.

I failed to take a picture of lunch, mostly because I was too famished to pause for even a second. It was one of my usual hummus sandwich/apple/carrots combos, looking a little something like this one from the past:

Dinner was over at Seth’s house, and it involved another batch of homemade hummus, along with couscous and veggies. Compliments to the chef:)

Thursday

After getting a late start on the day, I finally got around to the food part around 1PM yesterday. Oat bran rocks my world.

“Lunch” involved another SuperFood bar (reviewed here), along with more hummus and carrots. I’m pretty sure I would starve were it not for bars and this glorious blended chickpea dip.

For dinner, we headed to Green Tango, a design-your-own salad joint close to campus. I opted to put marinated tofu, avocado, tomatoes, and zucchini in mine, along with a huge cloud of spinach. It was delicious, but I’m not sure I approve of the Green Tango chopping method—everything gets diced together, making it resemble up-chuck. Totally not ideal for food blogging.

Friday

Before heading to the airport this morning, I whipped up another Smoothie In A Bowl, despite the chilly 30-degree weather outside. What can I say? My appetite for smoothie goodness is simply insatiable.

As per usual, I packed my meal for the airport. This one featured a double PB (peanut butter and pumpkin butter) sandwich.

I now sit at home, ready for some Christmas celebration. I think some holiday baking may be in order:) Having a joyous weekend, my friends. Regular posting schedule to resume immediately!

  5. I never thought the day that Caroline delaaaaay her flight home to stay in Durham would EVER come. Considering it was just, what, 2 weeks before Thanksgiving that we were discussing our fruitless (boyless) lives at school. I can’t wait to meet him next semester! Tee hee.

    Tell Seth congrats from me for getting his Master’s degree–wowza! Because we KNOW he’s not reading….right, SETH!?!?

    Miss ya girl!! I feel like I haven’t seen you in forever. The last 2 weeks felt like 2 months. Although, they probably felt like 2 minutes for you :)

  8. The way you arranged your banana slices on toast looks like a work of art! I never have the patience to do that, I usually just dump them on. You and Seth make such a cute couple. :) I’m sure he will get used to your blogging ways soon enough!

    i’m one of those readers who hasn’t commented much (ahem, okay… maybe at all) but i just had to now… thanks for sharing your boy history – i’m 24 and just now getting into my first actual relationship too. after awhile i started to think there was something ‘wrong’ but now it’s so obvious that the waiting was in God’s plan – and definitely worth it!
    anyway, just wanted to say thanks again for sharing & congrats girl!

    btw – NEVER get tired of all your hummus creations… yum.

  14. you should take pictures in front of him. You’re a blogger, he’s part of your life. You shouldn’t hide that from him. Now..go on and take the picture. it’s not about being something that you’re not infront of him. I did that to when I have dated people. don’t change something that is important to you.

  16. You guys are so cute together! I think it’s great that you’re enjoying time with him, don’t worry about not snapping pics if you don’t feel comfortable, the important thing is to enjoy each others’ company.
    Anyway, the food looks so fresh and delicious as usual, from the beautifully arranged toast to the mish-mash salad!
    (I find it so funny that you have the same names as cities over here in England- “Durham,” “Birmingham”! What part of the States are you from?)
