Impeccable Timing
Long time no type, blog friends! Although I would like to say that my extended silence (and lack of Sunday feature post) was due to an action-packed weekend of wild adventures, the truth is far less exciting: I got sick. Yes, thanks to my body’s impeccable timing, I contracted some sort of virus over the last 24 hours. Great way to spend my fall break, right? Well, there is a bright side–as my mom pointed out, it’s much better to be sick at home in my own bed than while off at school with no one to take care of me. In all honesty, my sick day hasn’t been so bad–I drank copious amounts of tea, watched Phantom of the Opera with my mom, plus, thanks to the magic of Sunday morning informercials, I discovered a new blending device to add to my Christmas list (the Ninja Master Prep). How do you pass the time on your sick days?
My eyelids are already drooping, so I better get to the food, quick!
Friday
My freezer was tragically devoid of any frozen fruit on Friday night, so I had to forage for alternative smoothie ingredients. The very tasty end result featured flavored yogurt, banana, chocolate HempShake, and hot cocoa powder.

Saturday
What breakfast could perfectly complement the comforts of home? Scrambled tofu, of course. This batch was less vivid than usual, due to the lack of turmeric in the house.

I spent much of the day in search of shoes to replace the pair that abruptly broke last week–with no luck. I also was on the hunt for some new jeans, and I didn’t have any success in that arena either. Jeans shopping has to be one of the least enjoyable experiences ever…besides bathing suit shopping. Anyway, I filled up with this in the afternoon.

Perhaps due to my arrival back in Dixie, I was craving Southern food last night. Thus, I made myself a homemade veggie plate. I found this “creamed” corn in the pantry in hopes that it would make a tasty side dish. Put simply, I was wrong. I do not recommend canned creamed corn.

My inner coconut monster came out last night, so I included some in the smoothie itself as well as a topping.

Sunday
On my plane ride down to Bama on Friday, I treated myself to a copy of Every Day with Rachael Ray. While the content was interesting enough, what caught my attention was an advertisement for chocolate milk–it featured a recipe for chocolate-banana oatmeal. While I’ve had this combination several times before, it just struck me as so delicious when I saw it, that I knew I had to make it this weekend…

My need for comfort food continued throughout the day, so I whipped up a batch of soup for lunch. This pumpkin-tofu soup was very similar to the one I prepared last summer, but I didn’t have my Eat Clean cookbook, so I guessed at the ingredients based on memory. It turned out fabulously delicious:)

The whole gang came over for our customary Sunday night dinner tonight, so I didn’t really feel much like spending my time in the kitchen–I’d much rather hang out with the fam. I just pulled out a Sunshine falafel patty and ate it atop a salad of spinach, cuke, tomatoes, mushrooms, & artichoke hearts.

Aww, I hope you’re feeling better now *hugs*. It’s so often the case that the body succumbs to viruses when we take time out or relax…I think running on adrenaline and the pressures of a certain environment takes its toll on the immune system and as soon as an individual is removed from that environment the body thinks it’s ‘safe’ to let the defences down. Clearly I have no medical experience whatsoever, but that’s just a theory I have

Oh, and I think my polenta is Bob’s red mill whole-grain, but it’s no longer in the original package, so it might just be whole-grain from the bulk aisle. But it’s one of those two.

Sorry to hear you were sick! On my sick days I tend to watch movies and sleep until I get bored out of my mind and then I will usually try and go for a walk to get some fresh air. The best “sick days” are when you’re home but you’re not actually sick

Hooray for smoothies on a granite countertop and not the 1970s stovetop!!! The lighting in my house is about 5000000x that of the lighting at school, wahhhhh!

Glad you’re feeling better. I don’t know what I’d do on a sickday. Thankfully, I haven’t been seriously ill in a while, though I almost always have a slight cough.
