Is It Friday Yet?

I’ll be frank. This week is rather, ahem, hellish. It’s the end of the summer semester, so my weekly schedule is looking a little ugly:

  • Monday-Microbiology Lab final; major lab report due
  • Tuesday-Microbiology quiz
  • Wednesday-Metabolism final
  • Thursday-Microbiology final
  • Friday-Metabolism term paper due

All that is in addition to class every day.

Gross.

As you might expect, I have quite a list of ways to celebrate come the end of this week:

  1. Visit the library to stock up on books to read…for pleasure!
  2. Frolic through Pier One
  3. Bake muffins (recipe suggestions welcome!)
  4. Catch up on magazine reading
  5. Go home to Birmingham!!!!

Clearly, I am most excited about that last item on the list. I’ll be going home for a few days next week to celebrate my dad’s birthday. I can’t wait to sleep in late, bake some

Here’s the day’s brain food:

Before heading to class, I made myself a peanutty parfait, using Fiber One 80 as the cereal.

Mini Review: I really dig Fiber One original for its lovely crunchy texture and awesome fiber content, so I thought I would give this new stuff a whirl. They’re not at all alike. Fiber One 80 tastes a little like Golden Grahams but overly sweet—a sweetness which comes from sucralose (aka Splenda). However, I did like that each serving provides a hefty dose of calcium (400mg per 3/4 cup).

For lunch, I made an Ellie recipe, Portobello Panini with Gorgonzola & Sun-Dried Tomatoes.

My tweak:

-I used twice as much cheese than is called for in the recipe. They were big mushroom caps! They needed to be filled with cheese-y goodness.

My exposure to Gorgonzola cheese has thus far been pretty limited…but I think you’ll be seeing a lot more of it here on the blog. It added such butteriness to the panino. One caveat to this dish—it’s incredibly difficult to eat! The mushrooms were so chewy that it took a little work to bite through it without all the filling oozing onto my fingers. It was a two-napkin kind of lunch.

After spending the afternoon studying, I took a break for dinner. I put together a quick stew inspired by Mama Pea’s Pinto Bean and Sweet Potato Stew.

  1. my friday is now thursday for the next two weeks so i’m prettttty darn excited about that haha. although it is ALMOST wednesday which brings us closer to friday!

  4. Good luck this week!! I loved microbiology when I took it in my undergrad. Next semester, I am taking Medical Ntr therapy II.
    Gorgonzola is the best. I am a fan of blue cheese on salads.

  5. What a good idea to made a panini out of portobello caps! I’ll definitely be trying that asap. Have you ever tried BBQ sauce and portobello caps? I love smothering them in BBQ sauce and making it into a sandwich with avocado and onion :-) …And where did you get that huge bad of sundried tomatoes? Costco, I’m assuming :-)

    You guessed it–I got that hefty bag of sun-dried tomatoes from Costco. They’re so much cheaper when you buy in bulk!

  6. Interesting take on the panini with the portobellos. I can see how it would be rather chewy to eat, but all that mushroomy flavour would be awesome.

  8. I really like portobellos but I don’t know how to cook them!!! My mom has a strong hate toward mushrooms so I never had them growing up!! Def. going to try this!

  9. i absolutely love mushrooms + cheese– i regret all the quesadillas i’ve ever had without mushrooms! this is such an incredible idea, and i think yours looks even more delicious than the cookbook’s!!
