Is It Sunday Yet?
I know this might seem like a strange question to be asking on the first night of the weekend…but is it Sunday yet? I head back to Durham on Sunday afternoon, and I so ready to be back. This winter break has seemed particularly long for several reasons:
a) It was longer—Duke extended its winter recess by a full week this year. It seemed about one week too long.
b) This holiday season was a quiet one for the Yoder household in that we didn’t travel anywhere, nor did we have any special celebration plans.
c) There is a certain something, or shall I say, a certain someone awaiting me in Durham whom I am rather anxious to see.
Here’s to hoping this weekend is an enjoyable, albeit quick one.
After Vegan Thursday yesterday, I discovered that my own unintentional Vegan Friday ensued without any difficulty. Sweet.
Thursday
Choco-berry goodness, granola and all.
Friday
After yesterday’s short reprieve, the bitter cold returned this morning, so I had to settle for some ellipticizing rather than a run. Once I finished, I toasted up a few slices of Ezekiel cinnamon raisin bread.
Have I ever mentioned my love of Goddess dressing? After my lunch today, I am thinking that I should have put it on my list of things that make me happy.
I spent much of the day in my new Snuggie, so some comfort food was definitely in order for dinner. Peanut Butter Chili it was! After a tip from a kabocha-savvy reader, I stuck my leftover kabocha fries from last night in the oven for an extra hour. The result? Extra-crispy deliciousness.

heya Caroline! i love that you celebrated Vegan Thursday yesterday and even had your own Vegan Friday today as a bonus. i really believe that everyone can make a difference through just one conscious act. thanks for the vegan-support!
i’m so happy to hear you tried my kabocha method! it also helps to cut in half, empty out the seeds, and cook it like that. i also put it in a little water in the bottom of the pan (kabocha cut side up) to keep it hydrated. anywho, my method is kinda silly if i explained it all but we do crazy things for love

speaking of that, i’m happy to hear you’re excited to get back to school. it’s nice to have something (or someone) to look forward to!

raisin toast with AB and pumpkin is now on my to-eat list! it’s not a weird question at all, i am SO ready for school to start (but i have to wait till the 19th!!)
I’m ready to start the new semester too! Christmas break was nice, but by the time its over, I’m always ready.
