It’s Not Every Day

As I sat down to compose this post, I predicted a wicked case of writer’s block would ensue; compared to the past few weekends (Seth’s visit and the 4th of July), this one was decidedly less action-packed. Upon further contemplation, however, the past few days have been host to a few out-of-the-ordinary events.

After all, it’s not every day that a Puffin arrives on your doorstep.

It’s not every day that I skip my run in favor of a dip in my dad’s Endless Pool.

It’s not every day that I meet a fellow food-blogger for lunch.

How was your weekend out of the ordinary?

Saturday

I had planned on making some banana pancakes for breakfast yesterday morning, but after my long workout in the pool, I just wanted fuel—fast. SIAB to the rescue.

This hummus-avocado wrap was pretty rockin’…but I was slightly distraught that my tub of tomato-basil hummus is now empty.

Scrambled tofu was on the dinner menu. This rendition was not so tasty as I remember it—I think the tofu:tahini ratio was off. Guess I need to make it again soon to regain my scrambled tofu skills.

Sunday

Before heading out to church this morning, I made my own version of an Egg McMuffin, using an everything flavor Bagel Thin, egg whites, reduced-fat Colby Jack cheese, and fresh tomato. Now if only they would make a whole grain version of the everything flavor…

For lunch, I flounced off to Whole Foods for a food blogger meet-up. Matt and I did some grocery shopping together before feasting on some salad bar goodies.

Papa Broc made his gazpacho again for dinner this evening. This recipe is flawless—my bowl got a few refills:)

Alright, off to watch Shakespeare In Love (never seen it, believe it or not). Good night!

  7. My weekend was out of the ordinary because I actually did nothing! It was the last holidays before I’m back at university for the rest of the year, so I made sure thoroughly enjoyed myself!
    Yum, that gazpacho looks delish! It’s winter where I am and far too cold to contemplate making some :( I will enjoy my pumpkin for now and hold on to the craving for warmer months :)

  15. I am SO jealous of your weekend. A meetup, a puffin and a pool? I want it all! I’ve always thought those endless pools were the coolest. I’m going to keep wishing!

  16. I spent all weekend sick in bed! But on the upside, my mom was sick too so we watched movies together all weekend! Nothing like some quality mother-daughter bonding time!

  17. This weekend, I got to go to the drive-in movies with an old friend from junior high who was back on leave from the Army, where he’s stationed in Texas. I just found out he will be deployed to Afghanistan for 4 months and am freaking out! I miss him already…He had only been home for 9 hours before he came to see me! I think that’s pretty out of the ordinary… ;)

  18. I have crazy carb envy right now!! I’ve only had puffins once (peanut butter flavor, naturally) and fell in love at first bite. If some of your boxes go missing, I definitely didn’t hop on a plane to your house and steal them. Nope, definitely not me.
