Kidney Bean Balls with Tzatziki
Serves 1
Ingredients
Bean Balls
- 3/4 cup cooked kidney beans, mashed
- 1/4 cup diced red onion
- 1/4 cup diced green pepper
- 1/2 tsp dried oregano
- 1/4 tsp garlic salt
- 2-3 T toasted bread crumbs (yields from about 1/2 slice whole grain bread)
Tzatziki
- 1/3 cup plain Greek yogurt
- juice of 1/2 small lemon (about 2 T)
- 3 inches seedless cucumber, grated
- 2 T. fresh dill weed, chopped
- 1 small clove garlic, minced
- salt, to taste
Method
1. Preheat oven to 375 degrees.
2. Combine beans, onion, peppers, oregano, and salt. Add bread crumbs one spoonful at a time until mixture reaches a consistency that may be easily molded into balls. You may not use all the bread crumbs indicated in the above ingredients list.
2. Place bean mixture on baking sheet in small mounds, about 3 T per ball. Bake for 15-20 minutes or until crisp on outside.
3. Meanwhile, combine yogurt, lemon, cucumber, dill, garlic, and salt. Add lemon zest, if desired.
4. Serve bean balls atop a salad and drizzle with tzatziki, or stuff into a whole grain pita or wrap.
