Lazy Days

The lazy days of summer have already begun—and the season hasn’t even officially started yet. The heat was pretty sweltering here in Raleigh this past weekend, so Seth, Margot, and I spent much of it in slow motion: hanging out on the patio, sipping iced coffee, with a few outdoor activities thrown in for exercise. While we all know how much I love winter and its associated holidays (and my birthday!), summer is fast becoming my favorite time of year!

Saturday

After a refreshing run yesterday morning, I returned home to make breakfast. Despite the soaring temperatures, nothing comes between me and oat bran…this bowl was like a peanut butter and honey sandwich, in cereal form.

For lunch, I made a simple wrap featuring one of my all-time fave combos—hummus and salsa.

Once dinnertime rolled around, I decided to put to use some fresh corn I bought at the Teet a few days ago. It was the perfect summery accompaniment to salmon burgers.

Sunday

This morning began with a looong walk with Margot. After an hour and a half in the heat, Miss Priss collapsed at my apartment’s doorstep. Whew.

After re-hydrating and re-fueling the pup, I fed myself too. A parfait seemed to do the trick.

Seth and I were anxious to get a little outside time, so we headed to Whole Foods for lunch before doing some outdoor window shopping.

Tonight’s meal centered around a fresh watermelon salad, the recipe for which will be posted on another blog as part of my “virtual internship” this summer. (I’ll post the link once it’s up!) It was the perfect combination of sweet, tangy, and spicy.

Before I go, I want to wish my dad (and all dads out there) a very Happy Father’s Day!

    Not much of a recipe there–I simply mixed brown rice, no-salt-added black beans, tomato, cilantro, a few dashes of chili powder, and a few drops of liquid smoke. Voila! Dinner is served.

  3. Whew, an hour and a half is a long time for little puppy legs! Haha, my Jack Russell lies down just like that too, with his legs all splayed out behind him–must be a breed characterisitic!

    Those salmon burgers are by a brand called Trident. I was impressed with their lack of additives and impressive nutritional stats–you can find them at Costco!
