Leavin’

As of tomorrow, I’ll be leavin’. Accordingly, this song has been stuck in my head all day.

What can I say? I’ll always be a sucker for teenage heart-throbs. I am only slightly embarrassed to admit that I am now following Justin Bieber on Twitter.

What was I talking about? Oh, yes. I’m leaving. I am headed to North Carolina for several days to find an apartment and complete a few other tasks related to beginning my graduate studies in nutrition. I am plenty excited for apartment hunting, but I’m far more psyched to see Seth:)

As per usual, I packed a variety of snacks for the trip.

Upon further contemplation, I added a few squeeze packs of Justin’s nut butter and a few Barbara’s samples. I’ve also packed my lunch for tomorrow, as I’ll be in transit come mealtime. Clearly, I like to be prepared…

Do you pack snacks/meals when you go on vacation?

I was busy getting myself organized for my trip today, so I stuck to some B-Hut classics for my meals:

This breakfast was prepared and consumed far too quickly for my liking. Sadski.

Lunch was a simple Greek salad. I could have used feta instead of cottage cheese (we have giant tubs of feta lurking in the fridge thanks to a recent Sam’s run), but my devotion to the cottage cheese-chickpea combo is far too intense to change the recipe now.

Scrambled tofu was on the menu for dinner again. Fortunately, this rendition turned out as delicious as I remember—quite a contrast from the last time I enjoyed this dish (which was an epic fail). I was relieved to discover that my scrambled tofu skillz aren’t lost.

OK Glee is calling my name. Next time I’ll be posting from NC!

  1. Have a great trip!!! I hope you find an apartment you like and get to spend time with Seth. I haven’t had cottage cheese in so long!! I need to get some pronto.

  5. Best of luck on the search! I always pack car/travel snacks! Very necessary- you never know when a) you’ll get hungry or b) no veg friendly food will be available. Great greeky salad- my favorite kind!

  6. I’ll always bring a Ziploc baggie of oatmeal, some bananas if I’m staying in the country, and nuts/nut butter packets/granola bars.

    P.S. I was reading your post from yesterday about photography, and it made me think of a comment I received today. I got a comment from an Anon today saying, “Why don’t you get a nice camera? You are a food blogger after all.” Thought that was kind of nervy! Hahaha

    And OOH yes I pack snacks. Always! You can see my latest post about airplane food. I just got back from 3 weeks in Australia too, where obviously I did lots of eating and snacking and will be posting all about it soon.
    I had actually purchased a jar of PB my second week which only lasted a week and now I’ve gone a week without. I miss it so much!

    I still can’t believe I haven’t tried your scrambled tofu yet. On the must-try list.
    I defininitely always pack food/snacks on my travels. Like the other commenters said you don’t want to be caught short with no veg options or bad ones at that, and also it’s so much cheaper to bring your own!

  13. Have fun apartment hunting. I just recently did the same. It was fast and easy though.

    I always carry snacks with me. Also, I bring my own lunch to school.

  14. I pack a TON of bars when I go on trips. I was in Florida for a week last month and only had 1 bar leftover at the end, I packed the perfect amount! (approx. 2 bars per day)

  15. i want that scrambled fu for lunch but i don’t want it to be hot! i wonder if i stick it in the freezer if it’ll be the same perfectioness.

  16. Good luck on the apartment search! I always bring at least 5 more bars than I end up eating… but it’s best to be prepared!

  17. I am kind of lame..LOL and I always stick to my diet. But I pack my food on the plane on vacation. I pack a huge cooler and check it in. I have done it many times..and it works out just fine.

  20. I always pack snacks and sometimes full meals. My husband and I bring 1-2 small coolers of food. One for me and one for him!

  21. haha I’ve been listening to J. Beiber on my ipod…no shame.

    I like to be prepared too. Usually, I pack bars, granola, fruit, & protein powder!

  22. I always pack food to take with my one trips. I usually take a small cooler on the plan with me so that I can have any meals or snack packed. I do not want to risk not having any food that I can or want to eat.
    I hope you have a great time with Seth and find a great place to live!! :)
