Lessons Learned, Part II
Another weekend, another set of lessons learned.
Lesson #1: Couponers are friendly people. Amidst my grocery shopping yesterday, I found this nice coupon lying on top of the cracker display, clearly left there by someone with more coupons than they could use! We didn’t end up buying these crackers, but hopefully someone out there found the bargain useful!
Lesson #2: It is indeed possible to make a meal out of Costco samples. Costco was a free sample festival yesterday—they were offering everything from granola bars to cheeseburgers to turkey sandwiches to pudding to crab salad.
Lesson #3: Margot likes fountains. I’m not sure if she was actually interested in the fountain or if she was just thirsty—regardless, Miss Marge was pretty captivated by it.
Lesson #4: I’m turning into my mother. I bought these cute sandals at TJ Maxx yesterday. Upon bringing them home, I realized that they scream “Louise”—I mean, they’re ruffled, white, and extremely comfortable (made by Dr. Scholl’s!). I’m not complaining though—if I turn into anyone, I’d prefer it to be my sweet (and stylish) mom:)
Lesson #5: Just when I think my kitchen is complete, I find another item I absolutely need. Between my garden and the herbs that I buy at the grocery store, I have quite an abundance of fresh herbs in my possession at any given time. However, they often don’t last as long as I’d like—all too often I go to use them in a recipe and find that they’re too mushy/wilted to be eaten. I hope this herb keeper solves the problem!

Saturday
Weekends are for pancakes, right? I decided to kick off the weekend with a stack of Peanut Butter-Banana Protein Pancakes.
I had a pretty late breakfast, so I never managed to eat lunch. Instead, we headed to The Flying Biscuit again to use up a Groupon that was about to expire.
Sunday
After a rather steamy (read: not refreshing) swim in the pool, I came home and made a quick egg white scramble.
Once lunchtime rolled around, I made a simple salmon salad with scallions & dill.
I was in the mood to cook again this evening, so I decided to make a batch of Mama Pea’s Italian Style Meatless Meatloaf Muffins. I made a few minor adjustments (e.g., kidney beans instead of pinto), but they still came out delicious! Seth also heartily approved.
This is bound to be a stressful week for me…here’s hoping it all ends well!

Since you mentioned Mama Pea’s recipe, I wonder if you have ordered your copy of the book. Mine has been shipped. I cannot wait. But, actually, I cannot for you to release your book one day. I think it will happen in the future, at least I hope so.

Margot! I love seeing her pics. The chips and guac look so tasty. And I love making meatloaves in muffin tins- awesome to have little mini servings. What did I learn this weekend? At 10 months pregnant I can still get around pretty well! Cornbread croutons are amazing.
I always do the coupon share…If I have one that is about to expire or something I always leave it out.
