Lessons Learned
Over the past 48 hours, I’ve learned several valuable lessons.
Lesson #1: Adjustable heel lifts are magical. I’ve been using my new adjustable heel lift in my running shoes to make up for my leg length discrepancy, and my joint pain has magically disappeared.
Lesson #2: One can never have too many Craisins. Thanks to Costco, I now have three pounds of dried cranberries in my possession.
Lesson #3: It is indeed possible to open a bottle of wine with a pair of pliers…but a corkscrew would have been a lot more convenient.
Lesson #4: Super 8 may be a Steven Spielberg alien movie, but it is nothing like E.T. I’m going to have nightmares for the next week, thank you very little.
Lesson #5: Patio furniture makes me happy. I finally bit the bullet and used a little blog cash to order a patio set for myself—I justified the purchase as a “business expense” because I plan on having many al fresco meals in the upcoming months:)Now the real question is, where can I find round patio seat cushions??
What did you learn this weekend?
As a newly enlightened woman, I shall delve into the weekend’s eats:
Saturday
Blueberry-pistachio-coconut is one fantastic combination. Pretty and delicious.
For lunch, I made a spicy tuna wrap featuring Tabasco and avocado.
Remember last week when I felt too lazy to make that tart? Well I finally got around to it this weekend, and I am very glad that I waited. Ellie’s Cornmeal-Crusted Ratatouille Tart was such a perfect meal to share with someone special. Plus, between the two of us, we polished off all 8 (small) servings.
My tweaks:
-I didn’t have a tart pan, so I used a pie plate. Not nearly as elegant, but I work with what I have, people.
-I omitted the Parmesan and added a touch more mozzarella to make up the difference.
-I used about twice the amount of eggplant called for in the recipe because, well, we lurve it.
This was a fantastic meal. I rarely use butter, but just the two tablespoons required in this recipe added such richness to the dish without making it heavy. The fresh summer vegetables provided a lovely boost of freshness, nutrition, and color. Two thumbs way up.
Sunday
I’ve had just a handful of multigrain Puffins hanging out in my pantry for a while now, so I finally put it to good use in a parfait.
Amidst an impromptu swim session and a quick Wal-Mart run, I made a simple PB & J.
Seth and I decided to have a date night tonight and returned to Bonefish Grill for some tasty seafood.
Alright, my tummy’s grumbling for a snack, so I must bid you good night!

I love Ellie’s cornmeal ratatouille tart! I make it all the time.
Also, I must say, I really love to watch you cook your way through her book as it’s one of my faves as well. Have you tried the chocolate tofu mousse yet? It’s killer!
I’m eating a craisin trail mix right now in my pumpkin pudding! Mmm. So much better than raisins. And about the scary movie, hey… ET gave me nightmares, so don’t feel bad! That tart sounds delicious!
I am going to try your cottage cheese parfait today….I have never liked cottage cheese, but hopefully this recipe will finally get me to enjoy it! I also want to try the Ellie recipe you featured..I bought the cookbook and will try the recipes that you give 2 thumbs up…thanks!

Puffins! I just got some- we hadn’t had them in ages. I always forget how yummy they are.

What a yummy grilled mix. Why is it that grilled foods just taste better? Happy monday to ya!
My lesson for the weekend is that google maps do NOT have a way of depicting hills! After my 11 mile run I thought I would bike to a friends house (3 miles away) but it was a direction I’ve never been and now I know why!! I had to walk most of the way there. The ride home was fun though! HA lesson learned!!
aww bonefish, ah. did you see sarah ? did you see me ? I was there saturday evening as usual, its like my home almost and close to my new place!! That salad is my go to- all the time- I can’t seem to get anything else from there now but I love a bunch of menu items.
love the lessons! i’d check world market, pier 1, and kohls for cushions (they are all in crossroads- not too far from campus) oh and home goods. I love the idea of breakfast pudding too (next post).

This is by far my favorite Ellie’s recipe! I have made it countless times and it is always so good. And the crust works the same if you are out of cornmeal and use all whole wheat pastry flour!
