Lethal Mango

Thanks to this afternoon’s lunch, I have another injury to add to my list of kitchen mishaps:

While I was attempting to peel a mango today, I lost my grip, and the peeler headed straight for my finger instead. Those mangoes are slippery little suckers—and a tad lethal.

My finger didn’t incur too much damage, but it is slightly debilitated for the time being—which makes slicing, dicing, and other kitchen prep about 10X more difficult than it should be.

What was your latest kitchen mishap? Today’s episode is one of many; at least it didn’t hurt as much as my last battle with the oven.

Despite my spaz attack in the kitchen, I did manage to assemble some tasty meals:

Apparently my taste-buds were craving variety today, because I decided to use as many oatmeal toppings as possible for breakfast this morning:

Although I suffered a minor injury in its preparation, lunch was quite tasty; mango and avocado make for one heavenly combo. Judging by the looks of this meal, I evidently want it to be summertime NOW.

For dinner, I whipped out the GF again for some grilled tofu. This time I marinated a few slabs of the good stuff in a spicy peanut butter concoction that I sweetened with stevia.

Alright, off to prepare for another Friday. Ta-ta for now.

  1. I probably have kitchen mishaps all the time…like today I knocked my head into the cupboard numerous times while cooking. such a klutz!!

  3. Ahhh!! I am with you on kitchen mishaps. I have so many cuts and bruises, it’s not even funny. I hope your finger is feeling better soon!!

    Your lunch looks so fresh and tasty! I can’t wait until raspberries start popping up around where I live. :D

  5. Your lunch looked delicious! And your breakfast also! I am not usually a big oatmeal fan, but I also don’t think to ever add the yummy toppings you did! Mango’s are so worth the mishaps, aren’t they? Glad to see the injury wasn’t too bad!

  6. I am a kitchen disaster! I don’t peel mangos- just cut in half, score, turn inside out and scrape the cubes off. Safer!

    I marinated the tofu, grilled and had it with spinach salad and other grilled veggies, it was delish, the tofu was very flavorful! I grilled a whole block of tofu and saved half for the next day, and it was still good and flavorful!

  8. My most recent (injuries are not a rare occurance for me either!) was slicing off the bottom half of my middle finger’s nail. It was a pretty bad one. I’m just waiting for my nail to grow back now….ugh. Glad yo see that your’s wasn’t as tragic as that!
