Life’s a Picnic

Good evening, all. In the interim since my last post, I have been enjoying my weekend to the fullest. It began with a fancy dinner and my sorority’s formal and ended with a laid back picnic in the park. In essence, ‘twas the perfect weekend.

I have many pictures to show you, of both the edible and non-edible varieties, so let’s commence this re-cap, shall we?

Friday

Prior to heading out to the big event, Seth and I dined at the Fairview Dining Room on at the Washington Duke Inn on Duke’s campus. Not only was everything elegantly delicious, but it was all paid for by my meal plan’s food points:)

Saturday

After a late night, I seized the opportunity to sleep in yesterday morning. As is typical for me on the morning following an alcohol-laced evening, I had an awesome run. I returned home and made friends with a certain Mr. Jay Robb.

Upon first sip, I noted a hint of chalkiness in the taste of this smoothie, but by mid-glass, I had been converted to the cult of Jay Robb. I’m looking forward to trying the other flavors!

Soon enough, my appetite kicked into overdrive—not even three hours later, I made myself “lunch” or whatever you call a meal consumed at 4 PM.

Then Seth and I spent the afternoon touring a local college; I plan on applying to enter its graduate nutrition program.

We headed back to Duke’s campus for dinner at the Devil’s Bistro. Highlight of the meal was definitely the baked sweet potato fries!

Sunday

This morning I discovered that I need to use apples in my oats more often. I tend to use mashed banana as the default, but this apple-laden version was pretty ah-maze-ing—particularly with a scoop on sunflower butter.

After composing this afternoon’s review post, I made myself a quick bagel sammich for lunch.

For this evening’s entertainment, Seth and I headed out to the Duke Gardens for a sunset picnic. I packed my Avocado Eggless Salad, along with a few crunchy accompaniments.

    I saw the portobello club on the menu last week and got super excited. Was the actual sandwich good? I know the sweet potato fries were :)

  10. Heeeeyyyyyyyyyy you were here and I didn’t even know!!!!! Ah, I laughed out loud when I saw the photos of my/ our campus! I was like I know where that is!

  14. Yep! You know you’ve got a great date ahead when the man brings ya produce! :) Hahaha. Once, my ex brought me red beets (he knows I love to pickle my own with vinegar & splenda! ) from a farm stand that he picked up because he thought of me on his way to visit with his parents. That was my “souvenier” from him.

    I have YET to try the wa duke. Must make a visit. I’m running out of food poitns though. Oh well.

    I think seth just won “most creatively adorable boyfriend” award. I didn’t know you were planning on staying in NC after graduation! Do you still have classes to take at U of Alabama (I think I remember you saying you were taking summer classes there to get a second bachlors degree in dietetics?) or are you all set to go straight into getting your RD?

    And thanks for the reminder of using apples ‘n’ oats together! I always resort to bananas as well, forgetting about how awesome apples are with nut butters and oats. So yummy! :D

  19. Thank youuu!! YES, someone else has found the joy in apple-y oats with sunflower seed butter. I sware it’s the perfect pair :)
