Lonely Sprouts
Good evening, all. Due to a particularly trying chemistry homework assignment, I don’t have much time or energy to chat tonight. However, before showing you the eats of the day, I thought I would share with you a quote I heard today from a fellow student’s presentation:
“Rather than eat my sprouts alone, It would be better for me to share a pizza with some friends.”
Amen to that.
No pizza was on the menu today, but there were some noteworthy eats nonetheless.
First up was an Ellie recipe, a Mango Lassi.
My tweaks:
-I used frozen mango instead of fresh for extra froth…and for the sake of my wallet.
-I used Greek yogurt instead of regular plain yogurt.
-I used agave nectar instead of honey.
While it made for a refreshing breakfast, this Mango Lassi was a bit of a snooze-fest. Next time, I am so adding coconut milk.

For lunch, I packed an unassembled Ginger Peanut Tofu Salad.
Tonight’s evening meal featured my beloved veggie plate trio: spaghetti squash, black beans, & roasted veg.
Alright, I am off to shrug off my chemistry woes and hop in bed.

I just made spaghetti squash for last night’s dinner and then got a little creative with the leftovers tonight with a cool peanut “noodle” bowl! Twas delicious!
