Lunch Break Entertainment
1:09 PM Tummy grumbles.
1:23 PM Rummage through fridge in graduate student lounge until it emerges in all it’s polka-dotted glory.
1:24 PM Dive into Mango Curry Hummus.
1:25 PM The sound of my celery sticks becomes intolerable. Time to bust out the laptop for entertainment.
Today’s means of mealtime entertainment turned out to be particularly successful, as I researched what kind of running shoes are best for a flat-footed chick like me. (Yes, after a full 3 years of running, I am just now getting around to finding out these piece of valuable information). My efforts yielded the following list:
- Nike Zoom Structure Triax
- Asics GEL Evolution
- Asics GEL Foundation
- Asics GEL Kayano
- Asics GEL Turbulent
- Asics GEL 3020
- Asics GEL 2160
- Asics GEL 1160
Although I have been quite attached to my comfy Nike Air Pegasus, I suspect that they are partially to blame for this recent hip injury. Perhaps Asics will serve me better?
Do you surf the internet while you eat meals?
Also, for you runners out there, what kind of running shoe do you wear?
I could talk about shoes all day, but now let’s turn to my other favorite topic—food.
Breakfast this morning was an Ellie recipe, Scrumptious Scramble.
My tweak:
-The recipe calls for 1 egg + 1 white per serving, but I used 1 egg + 2 whites…just because I was hungry.
This simple recipe made for a satisfying morning meal, although its flavor wasn’t exactly unique. I might add a different mix of herbs to make it more interesting.
Try this recipe for yourself at FoodNetwork.com: Scrumptious Scramble
For lunch, I crunched on some delicious Mango Curry Hummus. Coconut butter is just so magical—even in hummus form.
Once home, I decided to try my hand at making a vegan potato leek soup. You’ll notice that I used a base of pureed white beans rather than the traditional cream; the color is a little off because I left the peel on the potato. You know how I do.
Off to PowerPoint it up, with a little What Not to Wear action on the side. G’night.

I usually read blogs during lunch!
I’m fairly flat-footed as well, and I wear the Asics 2160. It’s a good shoe!
I always eat n’ surf! I even sometimes save computer school work for meal times! =)
Love this post because I just got my new running shoes yesterday and will finally get to try them tomorrow morning! I’ve had saucony’s in the past but these are nike zoom’s, I’ll have a review in the morning! And my mom loves air pegasus.
I overpronate and therefore have flat feet, so I always get fitted at a running store. I have good Brooks right now, but I’ve had Nike in the past. It makes a world of difference!
I think we would be good lunch partners indeed. I need someone to understand and keep me company when I break out my large container of colorful veggies
Enjoy your evening!
I always eat, surf, text….aaand sometimes watch tv all together…..i know, life on the edge ;D
I have flat(ish) feet too, and I use Mizuno Wave shoes… they’ve helped a ton with reducing shin pain. Have you thought about going to a running store and having them watch you run to pick out a pair for you?
I’m also fairly flat footed, and I love the Asics Kayano. I’m on my third pair!
Don’t feel bad! I ran for a good 3-4 years before finding that perfect sneaker as well.
Do you have any running stores around you? I had to travel a ways to find one, but it was worth seeking out. The people there were able to watch me run and they helped me find the perfect sneaker (an Asics Gel 2150).
Your lunch looks fabulous!
Pearl Izumi syncropace III. . .love these shoes!
Do you run flat-footed? Take a look at the bottoms of some old running shoes and see where they are worn the most….
I always eat watching TV or doing nothing… not surfing… a hand issue
I am guilty of eating while blog reading. It’s really hard for me not to be multitasking all the time!
And I wear Brooks Adrenalines with arch inserts. I have flat feet, too, and they seem to work the best of all the shoes I have tried.
I like to search the internet while munching, too, because it seems like the only time I have to do so. I hope your running research helps your hip feel better!
Have a lovely day!
xox
I also have relatively flat feet! Should definitely put some more thought into the sneakers I wear, and follow your good example…
If I’m alone and at home, I usually am doing something while eating. Breakfast –> watch part of a drama, snack –> read blogs, etc., haha.
That soup looks so tasty and comforting!! I’ve always hated creamy soups, but I love white beans, so I bet something like that would taste awwwesome.
I do like to surf while I eat on occasion. And especially read food blogs
I wear Ryka cross trainers (because I do a little bit of everything in my shoes and I need the side to side movement for group fitness. LOVE them. Mango in hummus? I must try!
Wow, I need to try that mango curry hummus, it sounds too good!
I also eat all the peels from my fruits and veggies (except for some like bananas, obviously). I too eat the peels on kiwi and potatoes. I like eggplant with the peel on when I roast and also when I roast butternut squash I leave the peel on, it is delicious!

That mango curry hummus sounds delicious! I wear Saucony ProGrid Omni 9 and replace them every 300 miles or so. I browse the internet while eating too — usually before school, while devouring breakfast.
I definitely fall in the eat-and-browse group. I always end up multitasking in my “down time”!
On a positive note, I had been running flat-footed for years, and I just made the changeover to running in Vibram Five Fingers. It’s truly amazing — my arches have actually come back up as my feet got stronger! It wasn’t all that fun at first, and going from super cushioned running shoes to a bitty bit of rubber between me and the road was tough. It’s so worth it now, though!
sometimes i forget that you aren’t vegan. i surf the net all day, even when i eat, if possible logistically. it’s a sickness =)
If I’m at home, I almost always have the laptop out while eating! I’m all about some multitasking!
That mango hummus sounds delish! I would love to know what all went into your vegan potato leek soup!
