Makin’ Like Goldilocks
The preparations for my impending move to Raleigh continued today in that the agenda included a trip to the mattress store. I had never been mattress shopping before, and I must say I derived a strange pleasure in trying out all the possibilities for my future bed. For a girl accustomed to rock-hard university-supplied mattresses, I quite enjoyed an afternoon feeling like Goldilocks. Plush or firm? Pillow top or no? 600 or 700 coils? I never knew so much variety could exist for a seemingly simple piece of furniture.
Did I just write a paragraph about mattress shopping? Oy. You know your life is dull when the highlight of your day is a trip to MattressMax. Please—tell me something exciting about your day. Maybe then I can live vicariously through you.
Let’s discuss more interesting things, shall we? Yes, food sounds like a good topic.
The other day, my mom randomly asked me, “Caroline, what’s your favorite Larabar flavor?” Without a moment’s pause, I answered, “chocolate-coconut chew.” Said conversation reminded me of a magical bowl of oats I had many moons ago featuring chocolate and coconut. I attempted to recreate it this morning with delightful results.
Another flavor combination that rocks my socks? BBQ-avocado.
I worked the evening shift tonight, so I packed a fresh salad for dinner (despite its shameful crunchiness). This was the first time that I prepared my Chickpea Waldorf Salad ahead of time, and I was pleasantly surprised at how delicious is was after several hours. Those extra hours in the fridge gave the flavors a chance to intermingle in their tastiness.

Chocolate+coconut is a magical combination indeed. I’ve never had a Larabar, though. I just can’t contemplate spending so much money on such a tiny bar that I could just make myself. :/ And then because another company bought out the Larabar company there was this whole discussion about changes in flavor and nutrition and I just decided to stay away from the drama…xD
Interesting things that happened to me today:
FINALLY got to go to a Farmer’s market for the first time all summer…but most of the vendors had been rained out last night and hadn’t been able to make it this morning. There were all of five vendors. :/ Better luck next time I suppose.
Afterward I went to the barn with my parents to await a veterinarian visit. One of our horses is vet-shy, so we had to add a sedative to her grain half an hour before the vet was to arrive. In the meantime, I was leading another horse in to the barn when she tripped, stumbled and fell on to me, crushing my foot. The short version is the vet got the date for the visit wrong and I had to suffer for an hour and a half before being rushed to the doctor to get a splint on my foot. I didn’t enjoy the nurse trying to bend my ankle and foot in ways they could not go when they were excessively swollen. :/ It was fun to get pushed around in a wheelchair, though. ;] And now I get to use crutches for a few days. Childhood dream achieved. =P

I really want to try the new Larabars, but I have yet to see them anywhere. I really love the PB & J flavor, though.
