Making a Dent
As some of you may recall from a post earlier this summer, I have managed to accumulate quite an extensive nut butter stash–let’s just say that the jar count is in the double-digits. I have successfully managed to “make a dent” in my nut butter stock, as I finished off not one but two nut butter jars today (my Maranatha creamy PB and my 365 creamy almond butter). My tiny rubber spatula got some good exercise today as a result–I wouldn’t want one speck of that nutty joy go to waste:) Are you as much of a nut butter addict as I am? Which nut butter is your current obsession? I’ve been on a good ol’ PB kick lately. Can’t beat the original.
Onto the abundantly nutty meals:
Thursday
This was my first time trying this flavor of Fruitein. As with my last experience with Fruitein, I was not impressed. A little too Flintstone vitamin-esque, and the texture was a little clumpy by the bottom of the glass. I’ll stick with my Spirutein.

After months of drooling over Marianne‘s tofu pudding creations, I finally decided to make my own version this morning for breakfast. Now I am regretting that I waited so long! It tasted like a decadent dessert, but all of the ingredients were relatively nutritious; the cereal was the only component with any added sugar. Prepare to see multiple variations of this in the future…

Tofu Pudding: silken tofu, frozen banana, PB, splash of chocolate almond milk, dark cocoa, & a handful of PB Puffins; glass of chocolate almond milk

Double-sandwiches are amazing–two sandwiches in one! This one had two different kinds of hummus, along with lettuce and tomato. I added some classic accompaniments for a perfectly satisfying lunch. Sometimes the simplest meals are the most enjoyable.

my version of a Big Mac:)
Recently I accidentally picked up a jar of marinated roasted red peppers at the store instead of plain roasted. I didn’t realize my mistake until after I opened up the jar. Oops. True to form, I couldn’t let them go to waste, so I used them in tonight’s fantastic salad. They provided a pleasant saltiness to the greens, making the balsamic vinaigrette all but unnecessary. Delish.

Romaine with marinated roasted red peppers, cannellini, steamed cauliflower & red onion, pine nuts, chopped basil, balsamic vinaigrette

I’m currently hooked on brazil nut butter (Futter’s brand, of course!)
I am starting to become a nut butter addict too…so much better than plain old nuts in my opinion! I am loving Trader Joe’s raw crunchy almond butter, my new raw pumpkin seed butter, and another new PB with Omega 3. Mmmm. I really must extend my nut collection
Oooh that tofu pudding sounds fantastic. I would love to try it out. I bought some new sprouted (???) tofu the other day, and it sounds like a great way to eat tofu “raw”.
Love the double decker sandwich. Yep, sometimes the simplest meals are the yummiest!
Hope you have a great weekend!
isn’t the tofu pudding delicious!!!
I love it as dessert with a lot of cocoa powder!!!

Holy yum that double decker sammy looks out of this world! Perfect idea to pair the different hummuses!
And I def feel you on the nut butter stash…def have SO many going on right now. I put my first jar to rest earlier this week but now I have tons to go through.
Now that’s my kind of sandwich.
Nut butters don’t last long enough around me for me to build up a collection ~ at the moment I’m eating a lot of Meridian (UK company)’s Almond Butter, but I’m really craving PB&Co flavours…which aren’t available here!
Have a lovely weekend

apricot butt…heh heh
I’m on a sunflower seed butter kick right now. I love the double decker sandwich. Great idea!
Right now my stash is low. I’ve been keeping it simple with tons of Almond Butter. I think I’ll place an order at Futters though for some pumpkin seed butter soon.
My favorite at the moment is Blue Diamond Creamy Homestyle AB. Its got the consistency of PB and its salty. I love it!
Must. Try. Tofu. Pud! What a great sandwich!! The bigger, the better
love your version of the big mac- looks delish!
My fave nut butter is raw almond butter!
I’m a total nut butter addict as you already know.. and like you I’ve been on a regular peanut butter kick lately!

I wish I had that many nut butters- they are all so yummy….I like variety! Your big mac is so my style….lovin it
I love a good nut butter but I only have 4 kicking around in my cupboard right now, 6 if you want to count PB2s. So I’m not quite at your level yet!
I can’t believe how delicious that double decker sandwich looks. WAY better than a Big Mac.
Ah, tofudding. You are a such a wonder, and so versitile. I love that you had it for breakfast. No reason not to!
[...] made Marianne’s magical tofudding before, and this morning’s rendition was just as delicious as my previous tofudding [...]
Here I am thinking i invented the tofudding! Granted, i didnt use a banana but rather chickpeas… so i cuess its kind of a Mocha Tofummus? Sure, I’ll say that. Anyhoo… next time throw some in… its the most awesome spread ever… i might almost like it more than peanut butter, and THAT is saying something.
Also… make my stomach growl more with a sanwich why dont you, that bad boy looks awesome!
