Margot’s Big Debut

After months of preparation, today marked the big day—today I brought my Margot home. I packed up the car with all the essentials:

It was a long drive down to South Carolina, so I kept myself occupied with a few Martha Stewart podcasts. I now know how to make my own purse organizer, arrange fresh flowers, and bake a Lady Baltimore Cake.

At long last, we arrived at our destination where we met my dad for this major milestone.

I am so happy to have someone new to love in my life—you can expect to see a lot more of her in the future:)

As for the rest of the weekend, I spent it eating lots of good food.

Saturday

Yesterday began with another trip to the farmers’ market:

Then I came home and made a rockin’ bowl of oat bran.

For lunch, I made a burger salad. What goes better with burgers than fries? I served mine up with a side of Snikiddy Baked Fries. Although the texture was decidedly more crunchy, they really do taste and look like real fries!

The evening meal was an Ellie recipe, Salmon with Sweet and Spicy Rub.

I definitely got more spicy than sweet from this dish. It was delicious, nonetheless and incredibly fast and simple to make.

Sunday

Before hitting the road, I made a delicious parfait.

We found ourselves with some extra time for lunch, so we hit up Chili’s. I ordered the Caribbean Salad with grilled shrimp. I gotta say, I don’t think I would have been able to find anything to eat on that menu in my vegetarian days—it was a very poultry-centric menu.

We didn’t arrive home until late, so I just made a microwave frittata with spinach, mushrooms, and cheddar.

Well, I have to rest up for what is sure to be a challenging week of puppy training!

  31. I think it’s astounding that Martha Stewart made such an awesome bounce back after going to jail. thought that would have ended her career, but not at all!

  33. There is absolutely no denying that Margot is adorable, but I don’t understand why you didn’t choose the adoption route? There are so many dogs and puppies (and kitties) who need homes.

  34. How did you prepare your kale with soy sauce and sesame seeds? Thanks :)
