Message from the Trenches
If mastering organic chemistry were a battle, then I have been in the trenches for the past 48 hours.
Oy. As a result, my eats have been kept simple but still nutritious—aside from a tad too much nervous gum chewing. Let’s take a look…
Saturday
In my most recent MixMyGranola order, I created a mix called Bloo-Stachio, featuring—you guessed it—blueberries and pistachios, plus cinnamon granola and shredded coconut. I decided to transform the flavor combination into an oatmeal-friendly format.
I broke for lunch and wrapped up a veggie burger with hummus and called it a meal.
As per our Saturday evening tradition, Seth and I skipped on over to Panera. My predilection for this eatery is not just because of the healthy food…it’s also due to the fact that I can wear my yoga pants and running shoes without care:)
You can probably guess my order without my telling you by now.
Sunday
I powered up this morning with a protein-packed breakfast.
Lunch was a Greek salad, with a healthy dose of that tasty roasted red pepper hummus.
Tonight’s dinner was the epitome of simplicity—PB & J. I have no brain cells to spare for cooking at the moment.
Off to do a few more rounds with the flashcards!

My heart goes out to you- My second-level chem class last semester BEGAN with the organic unit. I think the prof was attempting to weed people out, but damn it was hard. Hang in there.
I feel you, girl. Not with the organic chem- although I will have to take that in my journey to become a RD- but with rigorous classwork. It’ll end, and once it does, you’ll look back and see your hard work paid off!
All your studying is going to pay off! Just keep your “danging carrot” in sight and remember everything will balance in the end. I have a biochem studying to do today, so you are not alone.
I am fascinated with the idea of putting marinara on egg whites. That is a brilliant idea! Good luck with the rest of your studies!

Just another commenter, visiting back to say: You can do it! Organic chem is a slog, but… I too have no doubt that you will make it through, and perhaps you will do even better than you imagine! And sometimes a simple dinner is the best dinner… Food doesn’t need to be complicated to taste wonderful.
And organic chem just makes everything more complicated than it needs to be, but… As Caitlyn said, just keep that dangling carrot in sight and never forget the bigger picture.
(You already know that, I’m sure!)

I’m just catching up with my google reader… I’m taking organic chem 2 right now at rutgers, and IT IS HARD! It’s actually harder than orgo 1 that I took at duke, which was plenty hard. Hahaha. Good luck in the class!
