Midnight Snack

After my post last night, my sweet tooth began to beckon (as is typical!). I decided to make an Ellie recipe, her Chocolate-Cherry Almond Biscotti.

My tweaks:

-I used all whole wheat flour rather than using equal amounts of all purpose and whole wheat flours. As a result, my biscotti were much dried than I suspect they were supposed to be. Next time I might add a bit more oil or perhaps use all purpose flour as required in the recipe.

-I used raw sugar instead of regular refined sugar. Again, I think this substitution contributed to a coarser texture.

This was my first time making biscotti, and although it was a little more time-consuming than making simple drop cookies, the final result was worth the wait. Considering this was a midnight snack, I did not enjoy mine with a mug of coffee, but it was plenty delicious dunked in a glass of cold almond milk! The essence from the orange zest really shone through and perfectly complemented the tart cherries and rich chocolate.

Note: due to the crumbly nature of the dough, I cut my biscotti abnormally thick! Please try to pretend that they’re delicate and pretty like the ones featured in the cookbook:)

A few questions for you:

Are you an evening snacker? Not only am I a night-time nosher, but my whole family is—my Mom has a small bowl of ice cream every night at 8:30 on the dot; my dad has an after-dinner peanut butter and jelly habit. As the blog archives will show you, I had a nightly protein smoothie for years.

  2. Biscotti is so fun to make! I can’t believe just a few tweaks made the dough so tough your spoon broke. Maybe you’ve just got super strong arm muscles :) . I’m a total night snacker.

  4. I began making biscotti after I used a store bought one to hammer a nail in one time! I refused to believe they were supposed to be that hard and dry. I’ve made all kinds – my last ones were orange cardamom dipped in Felchlin Grand Cru chocolate. And I do enoy snacking late at night…
