Mixed Bag
Today was what some might consider a “mixed bag” in that there were some things worth celebrating…but there were also a few Debbie Downer moments. Allow me to explain:
First, I had no classes…but I spent most of the day doing homework. I could procrastinate and leave all that reading and such until after my return, but that’s just not how I roll.
Then, the UPS fairy came and dropped off a few packages. One was downright flounce-worthy:
…but the other was a little less exciting. Buh.
Finally, I miraculously fit everything into my suitcase…but only after sitting on it.
Nonetheless, I am sure all my trivial troubles will disappear soon. After all, I am headed to “the happiest place on Earth” tomorrow:)
Here’s what I’ve been nibbling on since my last post:
For breakfast today, I took a cue from Julie and added wheat bran to my morning oat bran-banana-almond milk combo. Not sure how I feel about it yet—it definitely yields a different texture than I’m used to. The honey-sesame cashews on top were pretty bangin’ though.
A few weeks ago, I picked up a new salad dressing at Whole Foods:
Typically, I buy Annie’s dressings…and only Annie’s dressings. However, the price differential between the 365 brand and Annie’s was just too vast for me to justify buying the Annie’s version this time. The Whole Foods recipe is pretty intensely sweet, but I’ll experiment with it on a few more salads before I pass down a verdict.
I was in a breakfast-for-dinner kind of mood this evening, so I whipped up a batch of my beloved Tofu-Banana French Toast. Perf.
Alright, I am now off to put the finishing touches on packing, but really what more do I need than this?

365 dressings are great and I only know so because I had coupons for free ones. I love ‘em though.

I’ve definitely got to try your french toast recipe out soon; I’ve been totally craving some vegan french toast. And speaking of eating the batter, that’s what’s so lovely about vegan cookies, though let’s be honest, kids will eat raw cookie dough anyway. No salmonella wahoo!
Anywho, your salad looks absolutely delish. If you ever to to michigan you must teach me how you make such yummy salads, hehe.

I need to try the vegan batter… I can never stay away from batters, vegan or not.
Wheat bran interests me but I heard that it depletes calcium (+ other nutrients)? I was told that from an RD so assumed it was true but have never researched it.

Wheat bran does definitely make a bowl of hot cereal different–I don’t love it, but I don’t find it intolerable, so I usually bust it out when I just want an extra grande b’fast.
