Mobile Eating
According to a recent article on Delish.com, subway cars are now host to 6-course gourmet meals. Apparently dining options on your daily commute are no longer limited to fare from the Golden Arches.
This latest development in the food service industry got me thinking about “mobile eating” in general. I realized that I hardly ever eat on the go. Sure, I occasionally bring a smoothie along for a car ride or grab a handful of trail mix on my way out the door if I am pressed for time—but by and large, I am a stationary eater. There are both advantages and disadvantages to this style of eating in that it forces me to appreciate my food more (i.e., eating versus dining), but it also requires significantly more time and/or planning.
Are you a mobile eater? What’s the strangest food you’ve attempted to eat while on the go? I’ve attempted to eat soup in the car before—let’s just say that it was a terrible idea and I ended up a hot mess
Let’s take a look at my eats for the day, shall we?
I had to be out the door by 7 this morning for my chem exam, so I prepared the easiest and fastest breakfast I know—overnight oats.
Once home, I headed to the gym for some glorious Food Network time. All that food-gawking made me hungry for lunch—Ginger Peanut Tofu Salad was on the menu.
Delighted with my sudden abundance of time, I decided to make vegan chili and vegan cornbread for dinner. I used Dreena’s recipe for the muffins again—still just as delicious as ever.
Alright, I am off to do absolutely nothing…and love it.

All of your eats look so incredible, but wow, that salad with peanut dressing is lovely! I am now craving some of the green stuff….
I don’t ever really eat on the move, actually. I find that when I do that I don’t really feel like I’ve eaten. And I’m not coordinated enough, honestly!
Cornbread muffins are my most favorite kind of bread (although, to be honest, I say this about a lot!
). They’re so sweet and soft and perfect. And the chili looks divine as well.

When I worked out of the office- I ate breakfast on the go pretty much daily and it was usually a protein smoothie. Now that I work from home, I rarely eat on the go (unless we’re on a long car trip). mmm cornbread and chili- can’t be beat.
I used to eat 1-2 meals in my car and realized it made me think I wasn’t really EATING.. so I nixed that habit and haven’t been happier!
I once brought a sweet potato in the car with me while traveling with my mom and grandma. While it wasn’t hard to eat, they thought I was nuts!
