Must Have Been Something I Ate: Giveaway and Recipe!
In case you missed it, I posted a cookbook review yesterday afternoon, and among the most recent additions to my cookbook collection is Must Have Been Something I Ate by Peggy Kotsopoulos.
Lucky for you, I was given an extra copy of this nutrition and recipe book to give away to one reader!

To whet your appetite for the kind of recipes available inside this book, here is an example recipe:
Chocolate Mousse
(Serves 4)
Ingredients
- 2 cups cooked, pureed pumpkin
- 1/3 cup unsweetened cocoa powder
- 1/3 cup maple syrup
- 1/2 cup coconut oil, melted
- 1/2 tsp. ground cinnamon
- 1/2 tsp vanilla extract
Method
Add all ingredients to a bowl and mix well with a fork.
Note: I added all the ingredients to my blender to incorporate more air and achieve an even lighter texture.
Although this recipe is as simple as it gets, the end result is amazingly delicious. It reminded me of intensely rich brownie batter!

i love oatmeal!
Food that makes me feel good are oats, veggies, and fruits. Nothing like a warm bowl of oatmeal with almond butter on top to comfort me, or a big healthy and colorful salad to keep me energized!

Did you let this dessert chill in the fridge before severing? Will letting it chill deflate the air-like quality you achieved from blending it?
