My Prince Charles
Although it was another dreary day today in Durham, there was a bright spot in my day. Indeed, the highlight of my day occurred in one of the places I would least expect it—the writing studio. As some of you may know, each semester, I tutor a group of twelve students for their freshman composition class. This afternoon’s appointment did not begin well; it was five past four, and I was getting anxious that the student had decided to skip the session. However, the student magically appeared just as my mood was turning foul. In walked a tall, handsome, sandy-haired young man.
“Sorry I’m late; I got a bit turned around downstairs.” Please note that this explanation was uttered in the most charming British accent you can imagine. And yes, this prince’s name was Charles.
I had a difficult time maintaining focus throughout the session: as he read his paper aloud to me, I was entranced by his mellifluous speech, transfixed by his piercing blue eyes. Sigh. If only he were three years older. What was the last unexpected moment of happiness you experienced?

In my usual morning rush on Wednesdays, I assembled a quick breakfast involving whole wheat waffles and Greek yogurt. The rest was kind of a blur.
Before heading out to meet Prince Charming, I made a lunch inspired by the Food for Living blog. That culinary diva recently posted a recipe for a Goat Cheese, Pumpkin Butter, and Apple Sandwich that had me drooling from the moment I saw it. I made a few adjustments by omitting the goat cheese and cranberries (I had none!), and substituting the 1 tsp pumpkin butter with about 1/4 cup pumpkin sweetened with stevia. The texture of the walnuts, pumpkin, and (honeycrisp!) apple together was amazing! I highly recommend it. On the side, I had a bowl of Amy’s Low Sodium Lentil Vegetable Soup.
After an evening of trudging around in the cold rain, I returned to the apartment ready for some hot grub. I settled on a simple kidney bean curry and a salad. To dress the salad, I simply combined tahini with lime juice, ginger, and agave nectar. Yummy.

I LOVE waffles with yogurt on top! I started eating them that way a few years ago when I was out of my usual maple syrup one day. It makes for a more filling breakfast too

Ooo I am hopeless when presented with cute British accents!! Three years is no big deal! Especially as you get older, my mom is 3 years older than my dad and I”ve had friends date even younger guys than that.
I was able to impart some waffle/ nutrition knowledge on my mom today when we went grocery shopping. She tries to be healthier by buying “whole grain” or “multigrain” labeled waffles but actually has no nutritional knowledge whatsoever so doesn’t realize the eggo brand or store brand is not whole wheat at all and full of the same processed stuff as the other ones. So i pointed it out to her and chose a better whole wheat and flax waffle for her. Don’t you love when you can teach people how to take care of themselves just a little bit better?!
