Mysterious Wednesday
Do you ever have one of those days that just seems bizarre? Today was definitely one of those days. This morning alone was enough to make me think I was living in some alternate universe. First, I attended a psychology seminar about mirror neurons and behavioral mimicry (a rarity in itself), and one of the speakers delivered a 30 minute speech with her sunglasses on–as far as I know, she was in no way visually impaired. Then, on my way to my next class, I spotted a guy brushing his teeth as he walked across the quad. To top it all off, I ran into the director of nutrition services on campus–and she was feasting on a lunch of peanut butter crackers and Gatorade. Where am I?
At least my food was somewhat within the realm of normality. Check it out:
Tuesday
I gave the papaya-mango combo another go last night, and this one was even better than the first–thanks to the addition of coconut extract and shredded coconut. Then again, coconut makes everything taste better.

Wednesday
Another rushed morning today, so my trusty smoothie-bagel combo was on the menu for breakfast. Last night, I threw a white peach on the verge of mushiness into the freezer, and it made for a lovely addition to my smoothie. I didn’t peel it before blending, hence the dark specks you see; I’d like to say I did so as an attempt to boost the nutrition, but we all know it’s just due to my laziness.

Lunch was simple and delicious. I love me some beans.

For dinner, I cracked open a fresh jar of cashew butter–you know what that means. Cashew Ginger Tofu, of course. There may have been some plate-licking involved.

Can’t eat tofu but I have ED & BV and I swear, I am always reading blogs where people make recipes from there that i had no idea existed..guess i need to pay attn!
Days that feel bizarre? Yeah, my life with a 2.5 yr old little human every day is a little wonky at times

And I’ve seen people who’s supposed to be healthy-eaters (RD) eat craps. So that’s inconsistency, but pretty normal unfortunately.
Such a weird day! I would not be able to concentrate if a professor gave a lecture in sunglasses.
Love your smoothies. They always look so good! I had my first green monster the other day and really enjoyed it. Pumpkin peach sounds like a fun combo.

Haha, the beginning of your post just made my day! I’ve never understood why some people wear their sunglasses indoors?! But then again some people probably wonder why I bring a jacket with me EVERYWHERE…even during summer…and I live in Texas.
Mmm, I looove all of your smoothie creations…I’ve been trying them for a quick breakfast during the school week now…Yours always give me the inspiration to try new recipes! Aaaand I’m about to read over your smoothie tutorial once again!
