Nearing the End

I write to you this afternoon just after returning from my last Whole Foods trip of the semester. Yes, this, my seventh semester, is finally coming to a close. I have suddenly come to the realization that my time here on campus is limited, and I am struck by my feelings of both sorrow and joy. It is no secret that my university is host to quite a list of social problems, ranging from extreme competition among students to wildly unhealthy eating behaviors. However, my college experience has certainly not been all bad: I’ve made some amazing friends, witnessed some thrilling basketball games, and, oh yeah, received a pretty good education, too.  So I have resolved to savor this final semester, emphasizing my university’s positive aspects while trying to ignore those less favorable ones.

Alright, now that I’ve gotten my daily cogitation out of the way, I’ll get onto the fun stuff…the eats!

Sunday

Before heading out to study with Seth last night, I fueled up with a big salad, featuring Quorn’s new turk’y burgers.

Monday

Today just seemed like a waffle kind of morning. Once my exam is done, maybe I’ll even make some homemade ones:)

In honor of humMonday, I made a batch of spinach hummus. Delish, as always.

My stack of PowerPoint slides to study is beckoning, so I’ll conclude here. Have a lovely evening!
