Not Your Average Holiday

My Memorial Day was spent in perhaps a non-traditional way, but I thoroughly enjoyed it. After returning home from the lake, I broke in my new Air Pegasus kicks by setting out on a run in the midst of a light rain, which turned out to be strangely enjoyable. Then I headed to my second happiest place on Earth, Williams-Sonoma, where my dad and I picked out a grilling basket we had spotted in the most recent catalog. With this new piece of cookware, we can cook veggies on the grill without intermingling them with meat items…we gave it a test-drive today (see below). Then we headed to my absolute happiest place on Earth, Whole Foods, to pick up the ingredients for this evening’s “unconventional” Memorial Day menu: grilled eggplant with roasted red peppers. Not exactly the usual kick-off to summer, but it was quite foodie-riffic, so of course I loved every minute. What was on your agenda today?

Just after completing my cereal review post, I added a new variety to my favorites list: Cascadian Farm Cinnamon Crunch. If it sounds like a total Cinnamon Toast Crunch rip-off, that’s because it absolutely is. One taste, and I was 10 years old again–from what my taste buds can recall, this organic version tastes just like the original.CIMG7916

Monday

We left early this morning, so I kept breakfast simple…but I just can’t resist playing with my food:)

I whipped up another impromptu tofu salad this afternoon (I explain my method here). This one had currants, walnuts, vegan mayo, and onion powder. Fun tidbit about currants that I learned from Bobby Flay today: creme de cassis is a liqueur made from currants. Huh.

For dinner, we tried out our new grilling basket with some eggplant. Once combined with roasted red peppers, plus a little salt & pepper–delicious! I made my portion into a wrap with Garlic Lover’s Hummus. They are NOT kidding about the “garlic lover’s” label–I am still tasting notes of garlic, long after dinner. 0% Chobani made for a delightful creamy “dessert.”CIMG7935

  5. Glad you had such a good day today! And wow, I totally JUST bought that same cinnamon crunch cereal today at Whole Foods! Cinnamon Toast Crunch used to be a staple in my diet, haha.

  6. mmmmmmm….mango smoothie…my favorite!!! I just ordered some pina colada spiru-tein, I had a sample pack the other day and put some mango in it…holy cow it was yummy!!!!

    Your wrap looks tastey too, I love eggplant and roasted peppers!

  8. Williams-Sonoma followed by Whole Foods sounds like the most perfect day ever to me too!! (It might be because I want to buy everything on their shelves…)

    Cinnamon Toast Crunch was one of my top 3 fave cereals as a kid, so it’s great to hear that Cascadian Farms’ version is spot-on! I’ll keep a lookout. Did you buy it at Whole Foods?

  12. I was such a cinnamon toast crunch junkie when I was a youngin! I’m talking BOWLS of it. I need to pick up a box of that!! Your grilled veggies sound perfect to me! Screw “typical” BBQ eats ;)

  14. The wrap looks delicious. I love anything garlic and although I find it hard to believe, friends and family swear I carry the lovely aroma of the stinky rose on my skin for days after consumption (Does this stop me? Never!)

  16. I love garlic so much, I probably use/buy about 6-10 heads of garlic a week. Roasted garlic is one of my favorite food items.
    Garlic is like salt or pepper to me.
    Your always trying the neatest cereals.

  17. Oh girl, that grilled eggplant turns me ON! Lol, TMI, sorry. Eggplant is totally my favorite food though, which is odd perhaps, but it could be worse! Sounds like you kind of had a glorious deconstructed grilled babaganoush!
