On the Menu—Week of November 11

Good evening, friends! I’ve got another busy week ahead of me, but I thought I’d share this week’s menu, just because I’m pretty psyched about it. I’m hoping I’ll be able to get creative in the kitchen with the upcoming Thanksgiving and Christmas breaks. But for now, here’s what I’m cooking up:

Monday Fish Tacos. Seth has decided that he really likes fish tacos, so I make them pretty much every week. Tilapia is his fish of choice (which is what I used tonight), but sometimes I like to switch it up with salmon or cod.

Tuesday Zucchini Noodles with Turkey Meatballs. I’ve never made meatballs with actual meat…I’ve only ever made my veg-head bean version. So this could be interesting, particularly because I don’t have a recipe in mind (I like to improvise in the kitchen, in case you can’t tell).

Wednesday Baked Egg Pizza with Kale. You all have seen this one before! Pizza is still a popular weeknight choice around here, so I try to make a different version every week. Last week it was pineapple-pepper pizza, so this week I’m going a much more savory direction.

Thursday Banana Pancakes. Toward the end of the week, my motivation for cooking starts to wane, so I build in a few easy meals. Pancakes are pretty much as easy as it gets!

Friday Out.

Saturday Grilled Cheese with Brie + Pear; Butternut Squash Soup. I’ve been having a craving for Brie lately, so I dreamed up this combination last night.

Sunday Mom and Dad’s. We almost always eat dinner at my parents’ house on Sunday nights. Good food and good people :)

    There’s no real recipe to it–I usually season some fish with chili powder, cayenne, and garlic then bake or grill it. Serve with corn tortillas, Greek yogurt, salsa, and lettuce–you’re done!
