One Step Closer
Some of you may recall that one of the classes I’m enrolled in this semester is called Food and Energy, and as the name suggests, it focuses on sustainable practices for the production of food and energy. As the main project for the class, each of us is assigned to one of five clients with whom we are to develop more sustainable initiatives for the improvement of their business. Yesterday I received the wonderful, fabulous news that I will be working on my first choice among the clients: Duke Hospital.
My teammates (including Allie!) and I will be working closely with the Duke University Hospital eateries to propose “greener” preparation methods in their new kitchens to be added in 2011 and 2012. Possible changes we’ve considered thus far include: obtaining more energy efficient kitchen appliances, reducing waste products from serving ware, and (my personal favorite) designing more sustainable and nutritious menu items. I am supah-psyched to be working so closely with a hospital dining operation, as it relates so closely to my responsibilities as a registered dietician in a clinical setting. This project makes me feel like I am one step closer to becoming a dietician…which makes me exuberantly happy. Yes, I know—I am such a nutrition dork.
Aside from luxuriating in my recent good news, I’ve also been doing plenty of eating since last night. Observe:
Last night while digging around for a snack, I discovered a long neglected container of macadamia nuts. Said nuts provided the inspiration for this morning’s tropical breakfast…
Following some intense homeworking and a cold, wet trip to Whole Foods, I finally settled down for some lunch. A grilled hummus and cheese sammie was on the menu…all I have to say is: Sabra, you make my heart sing.
I had to make another trek to campus for a group meeting (regarding the project described above)…and once again I returned cold and hungry. Pumpkin bulgur chili seemed like just the right thing for din-din.
Now I am off to attempt to do more work…C Yode out.

It is awesome that you get to participate in a project that you are so excited about. There is nothing wrog with being a dork about something you love. I get the same way about rocks, minerals, and theater, oh and food, too!

I caved and bought Sabra the other day- I thought it was the best of the best UNTIL I tried the hummus from the mediterranean deli by our campus- Neomonde- oh my goodness- their hummus is out of this world, so fresh, so tasty, goodness goodness goodness. i think they have a deli out in chapel hill.. not sure.

Dear C Yode – will you move to Chi Town and be my personal chef? Without you I’m off to eat baked lays, drink wine and order in sushi with mayo toppings.
This is where you feel sorry for me and hop on a plane. That whole “finishing your degree” thing will work itself out on its own.
