One Thousand!
Tonight’s post marks an important milestone in Broccoli Hut history—it is the 1000th post published since the establishment of this blog.
The past three years of blogging have gone by fast—it seems like just yesterday that I was showing you my dorm room creations cobbled together from the dining hall salad bar and my stash of snack foods.
Since the inception of The Broccoli Hut, I’ve gone through some important life changes:
I decided to pursue a career as a dietitian.

My sister got married.
I ran my first race.
I attended the first annual Healthy Living Summit.

I was diagnosed with hypothyroidism.

I found a long-term treadmill buddy.

I graduated from college.

I was accepted into graduate school.

Clearly, this blog has documented my transition into adulthood..thus far. Here’s to a thousand more posts and just as many memories.
What milestones have you had in the past three years? What accomplishments are you most proud of?
Onto the grub.
Breakfast was an Ellie recipe, Whole Wheat Pancakes with Strawberry Sauce.
My tweaks:
-I used white whole wheat flour instead of half all-purpose and half whole wheat.
-I used almond milk instead of buttermilk…because I just don’t groove on sour milk.
-I used agave instead of honey.
The pancake recipe was pretty standard, so I don’t have much to say about that…but the strawberry sauce is worth noting. I loved the citrus action (from the lemon juice), and it was super-simple to prepare (eek! I’m starting to sound like Sandra Lee!). The sauce was a nice alternative to my usual pancake/waffle toppings, and I bet it would be delicious mixed with yogurt or on top of banana soft serve.

After a full morning of errands, I came home to make a simple lunch. True to Boxed Soup Chef form, I jazzed up some low-sodium tomato soup with beans and veggies.
For dinner, I recreated a dinner from our Asheville trip, maple-mustard tofu with broccoli.

when i diagnose pts with hypothyroidism i always say – if i could pick a chronic condition to have, this would be it

As far as milestones, I will stretch the timeline from 3 to 4 years. I finished my undergrad and got a major in Food Science in 07, got married and moved from Brazil to Austin, TX, that same year, started my PhD in Nutrition in 09, became Vice-President of the Nutrition Graduate Student Assembly, and was nominated and won a scholarship. Have a lot to thank God!
