Overnight Oats

It’s no secret that I love my oatmeal. It’s rare that I enjoy this breakfast treat less than 3 times in a week. However, when the Alabama heat reaches its peak in the summer months, a piping hot bowl of oatmeal is not exactly enticing. Nonetheless, I have found a way to get my oatmeal fix, without having a heatstroke amidst my morning meal.

Overnight Oats

(Serves 1)

Blackberry-Almond

Ingredients

  • 1/2 cup old-fashioned oats
  • 5.3 oz container of Voskos organic Greek yogurt, honey flavor* (See note)
  • scant 1/2 cup water
  • 1/2 tsp. “good vanilla extract” (as Ina would say)
  • cinnamon, to taste
  • 2 Tbsp. sliced almonds
  • 1/2 cup fresh blackberries

Method

1. Combine oats, yogurt, water, and vanilla in a cereal bowl. Mix well and place in the fridge. Allow to soak for at least 8 hours.

2. Remove oat mixture from refrigerator and top with cinnamon, berries, and almonds. Enjoy!

Note:

You may substitute an equal amount of Greek yogurt by your brand of choice. For suggestions, please see my Greek yogurt guidebook.

Other variations:

Raspberry-Cashew

Ingredients

  • 1/2 cup old-fashioned oats
  • 5.3 oz container of plain Greek yogurt
  • scant 1/2 cup water
  • 4-5 drops NuNaturals vanilla stevia
  • 1/2 tsp apple pie spice
  • 2 T raw cashews
  • 1/2 cup fresh raspberries

Pumpkin-Banana

Ingredients

  • 1/2 cup old-fashioned oats
  • 5.3 oz. container of plain Greek yogurt
  • 1/4 cup pumpkin puree
  • 1/2 cup water
  • 4-5 drops NuNaturals vanilla stevia
  • 1/2 tsp. apple pie spice
  • 2 T sliced almonds
  • 1 small banana, sliced

Tropical Kiwi-Coconut

Ingredients

  • 1/2 cup old-fashioned oats
  • 5.3 oz. container of plain Greek yogurt
  • 1/2 tsp. coconut extract
  • 1/2 cup water
  • 1 packet stevia
  • 1 small kiwi, chopped
  • 1 T. coconut butter

Strawberry-Sunbutter Overnight Oat Bran

Ingredients

  • 45g (scant 1/2 cup) oat bran
  • 5.3 oz. container of plain Greek yogurt
  • 1/2 cup water
  • 1 packet stevia
  • 1 T. wheat germ
  • 1 cup strawberries, chopped
  • 1 T. Sunbutter

Method

(See instructions above)

*wheat germ may be added the night before or immediately before serving; I prefer the latter so that it maintains its crunch.

  1. overnight oats make my life SO much easier!! I definitely plan on whipping them up when I start working and have to be out the door by 6am. Oye vey, not excited for that — but I am excited for the oats :)

  2. I can’t wait to try this! I tried an overnight oatmeal recipe last year and it was SO good. Then I tried another one this year and didn’t like it. I’m hoping this turns out like the old one I tried!

  8. I love overnight oats. I’ve been on such a kick with them lately. :D

    They’re also yummy if you skip the overnight soak and just mix in the yogurt directly. The oats get chewy, but it’s a fun and tasty consistency. :D

  9. I am a mega overnight oats fan! I love how you can just bowl an almost complete breakfast bowl right out of the fridge every morning! Your blackberries look gorgeous. I think I’m going blackberry picking today!!
