Packed and Ready

Tomorrow morning I will be making a much anticipated trip home for the Memorial Day weekend. Not only am I eager to have some family time, but the Yoder clan is anxious to meet Miss Margot!

I have a terrible habit of over-packing for trips. I inevitably bring two pairs of shoes more than I need, and I often bring a surplus of reading material; add in a bag of emergency snacks, and you’ve got an over-stuffed suitcase. This trip is no different:

Are you a light packer, or do you over-pack like me?

I am very nervous about bringing Margot on the plane tomorrow morning—pray that she stays quiet and happy for the duration of the flights!

As you might imagine, most of my meals today were attempts to use up any remaining produce in my fridge…

I made a pretty magical parfait for breakfast. If you haven’t tried it yet, I highly recommend mixing a scoop of protein powder into Greek yogurt—it tastes just like pudding! This morning’s parfait featured said protein pudding with chocolate protein powder and dark cocoa.

For lunch, I enjoyed more of that delicious red corn—it’s so sweet and pretty:) The protein for the meal was a sliced up mahi mahi burger.

The much delayed evening meal was Ellie’s White Gazpacho with Grapes and Toasted Almonds.

This recipe was pretty strongly flavored—highly acidic and very garlicky. I might mellow it out with some different seasonings if I were to make it again, which I probably won’t. I much prefer my dad’s classic gazpacho.

Alright, I need to get my rest for a big travel day tomorrow. Good night!

    Ughh. I’m such a pack everything just in case person. It’s kind of a problem. I alway have way to much stuff that I really don’t need.

  4. I love stirring protein powder into my yogurt, except it can be a very hard process often when it doesn’t want to mix!

    SUCH a cute polka- dot suitcase. We really do have the same tastes in just about everything :)

  7. I usually think I’m packing lightly, but in reality I don’t ever use everything I bring with me. I think it’s something you get better at over time.

    What kind/brand of protein powder do you use?

  8. I used to be a huge “over-packer” as well — I was like McKayla in that I always thought I should bring __(insert probably unnecessary item here)__ “just in case”. However, after multiple 24+ hour flights home with multiple stopovers where I would consequently have to drag a bunch of stuff around or, heaven forbid, have to pick up my suitcases and RE-check them in… I realised it had to stop, haha. Problem solved! It is hard, though. And sometimes you WILL actually need those “just in case” things.

    Chances are you can cut back on the reading material, though! If you run short, you can always pick up a new book for a couple of bucks, right?

    Hope Margot behaves on the plane! If worst comes to worst, get a vet to prescribe a harmless, gentle tranquiliser to get her to sleep through the flight. Most dogs fall asleep to the feel and sound of the engines, though.

    Wow. Your breakfast, lunch, and dinner are all gorgeous, nutritious, and delicious. Im about to have breakfast – and I have everything to make the parfait!! Amped!

    I am a good packer – very light! My mother is the opposite though, it takes her DAYS to pack for a trip.

    Also… the pup is ADORABLE! I just got a puppy 3 months ago!

  10. I hope the travel goes well! I am a major over packer too. It doesn’t matter how many trips I take, I still have trouble packing the right amount ;) That parfait looks like PERFECTION! I am totally mixing protein powder into my next parfait. I always wondered how that Ellie dish was

  13. Just out of curiosity, how were you able to take Margot with you? Most planes don’t allow dogs or only allow them in the cargo. Did she go in the cargo?
