Pizza 'n Ice Cream
Tonight has been filled with the typical Friday night eats: pizza ‘n ice cream–quite the departure from my usual tofu and veggies, no? Fear not, I still managed to keep my indulgences relatively healthful. Stay tuned for the deets.
Rewind to last night:
Thursday
Last night marked the occurrence of a tragedy–I ran out of granola. Full disclosure: I finally trashed the Mango Coconut Melange granola–I had successfully picked out all the goodies (i.e., mango pieces & almonds) so that oats were all that remained.

Friday
After an absurdly hot and humid run, I settled in to make some Blueberry Carob Pancakes from ED&BV. I changed up the recipe a bit by using chocolate almond milk rather than vanilla soymilk and whole wheat pastry flour instead of barely flour. I topped them with a mixture of almond butter and pure maple syrup–heavenly! Question: why does carob get such a bad rap? When I was excitedly telling my mom about my fantastic breakfast (yes, I do discuss my meals with my family on long-distance phone calls), she reacted with near disgust.

After months of drooling over other bloggers’ versions of “edamummus,” I tried my hand at making it this afternoon in my new food processor. Love the taste AND the lovely hue.

For dinner, my sister Lea and her husband Ryan joined my dad and me at the Mellow Mushroom. I come here solely for the crust–it’s so perfectly chewy and fresh! I wonder if they’ll ever make a whole grain version? Anyway, I ordered a customized pizza with my favorite veggies and without cheese; the waitress even made sure that the parmesan and garlic butter were left off the crust. I ate most of what you see here–let’s just say I was carbo-loading for my race tomorrow.

Afterward, we headed to the local creamery for dessert. I ordered a small dish of their Only 8 frozen yogurt. Suffice it to say several brain freezes were involved in the consumption of this treat:)

Sorry I’ve been MIA the last few days! Finals are looming…
When I make something with carob I always “rename” it chocolate for my family until they have tasted (and confessed their enjoyment) the final product. Sometimes it’s all in their heads. ;P
That ice cream looks great! I wonder if they sell it out here on the West coast?
