Plan B
Well, I was going to include a complete re-cap of my day at the hospital today…but this morning I received a call from the RD I was to be shadowing–she’s home sick with a sinus infection. To be honest, I was a bit bummed when I received the news. However, I completely understand the situation and can only wish her a speedy recovery. My next visit is scheduled for Tuesday–let’s hope that it works out!
Anyway, I must resort to Plan B for tonight’s topic. I derived inspiration for a certain four-legged creature who is currently sitting at my feet:

BFF at the lake
Meet Chester. I realized that I talk about all the other dogs in my life quite often (Greta, Fred, Gus, & Dixie), but Chester has remained unmentioned. Here are a few facts about the Chet-Man:
*We brought him home from the Greater Birmingham Humane Society back in August ’02.
*He’s too smart for his own good: he knows how to open doors, and he routinely leaves them open for bugs and every other unwelcome visitor. He also lets the other dogs outside when they need to tinkle.
*As a result of his abusive past, he has several neuroses. Chief among his fears are tile floors, ironing boards, and watches that beep on the hour.
*He burps like a human. I’ve taught him well.
What quirks do your pets have?
Despite my disappointment today, I still fed myself well. Check it out…
Thursday
I am about this close to ordering a big tub of the Blueberries N Cream Spirutein. It dazzles my tastebuds every time.

Last night before bed, I prepared a small batch of Better Bunny Salad (which I’ve made before). It made for a quick and tasty breakfast–a necessity on class days. Perhaps it would be even better with coconut??

Better Bunny Salad: pineapple, carrots, raisins, walnuts, & vegan mayo
After discovering my tub of nutritional yeast in the laundry room, I realized that I need to incorporate it into my cooking more often. This White Bean Dip used about a tablespoon. Only 987979453 more to go.

White Bean Dip (ED&BV); cukes; celery; Ezekiel pita; greens with oranges, broccoli, & sweet Vidalia onions

Although I never cared much for sausage as an omnivore, I certainly do appreciate the occasional bit of soy sausage. This dish was inspired an old Vegetarian Times recipe.

Lightlife GimmeLean Soy Sausage

Louisiana Greens & "Sausage"; sweet potato; fruit; hemp milk with Amazing Grass

seasoned simply with garlic salt
As a sweet end to the meal, I downed another glass of Amazing Grass. This flavor is by far my fave. Perhaps it’s the hemp milk with which I mixed it…or maybe I just like things made for kids.

Amazing Grass for KIDZ (chocolate)
Alright, the weekend is calling my name. Good night, bloggies.

Love your dog! I have a cat that loves to play fetch. He thinks he’s a dog!
wow, he can open doors and does it for other dogs? what a gentleman(errr dog). My dog plays dead when you say “bang”, and she barks on command. She refuses to walk upstairs by herself when we’re around. However, when she’s seemingly alone, she’s able to creep up.
coconut always makes a great addition to everything, especially carrots (i.e. carrot cake). i must try chocolate flavored amazing grass stuff, the regular kind is meh, although i’m sure it’s really good for you (not awful tasting like vega).
I have a parakeet that does all sorts of weird stuff. He talks, though, which is pretty neat.
Mmm what a delicious breakfast! That dog is soo cute too!
Aw Chester!!! So adorable. He can open doors and burp like a human..that’s impressive!
I love my baby Pokey so much. He is a beagle! He is so loud, but I love him for it. Whenever anyone gets up from the couch, he runs over and takes their spot. Every time, without fail!
My babygirl, Zelda, is a little biter and totally off the wall. She’s a fluffy black cat. My favorite Zelda memory is from when I first adopted her and we were playing on my bed and she was standing on a small pillow I have and she fell asleep standing up! It was so cute. It was kind of like how a student nods off in class and catches himself. Ha!
awe chester sounds like an awesome pup! so smart. i am so dog obsessed.. you have a lot of dogs in your life! that is awesome. i live with 4 dogs and a cat. that bean dip looks soo creamyly delish. yes creamyly is a word now.
I’ll have to try the Amazing Grass kids, sounds good!
i swear missy, you are just too creative in the kitchen! Its always something new and fabulous over here!
That pup of yours has such a sweet face and I’m so glad he has a nice home now!
p.s. are you okay?! Why the hospital? Am I forgetting something? haha
I don’t have any pets anymore but my cat used to sleep on his back with his legs in the air like a dog!
Kudos to your family for rescuing Chester! Doesn’t it break your heart when pets have issues from their past
Why is kid food so good? I still order off the kids menu if I can get away with it!
cute dog
the kids amazing grass shake sounds great!
My cats have to many quirks to name! haha
Mmm, I must make that Bunny Salad again. It was so good the first time and you make it look amazing!

(It’s Rosalie, by the way!)
Chester is just adorable
My cat has this quirk of being REALLY excited whenever we take out the trash, because sometimes we go and scoop out poop from the litter box before we tie off a trash bag. 2 birds with one stone and all. So every time we start taking trash out, he will follow us/spring ahead/meow a lot/jump around/paw at our heels, all excited as if to say, “Oh boy! You’re gunna clean my poop again now aren’t ya?>!?!”
Sorry your RD shadowing didn’t happen… hope the dietitian recovers fast
Oh yeah ;p i got a blog. Not sure how much it’s gonna get updated, but I just wanted to let you know!
How come my blog doesn’t link automatically? Anyway…

chester is soo cute! my dog titan does that circus dog thing where they stand on their back legs for a long time. haha
hahaha- chester sounds awesome! I want to hear him burp
Frank is a big burper too! Your Better Bunny Salad looks so freaking good.
Chester! What a nice boy. My cat likes to speak, a LOT. Lately he’s been squeaking too, like he’ll go to meow and only a high pitched squeak will come out. Pretty funny.
Lightlife sausage is supper yummy, I think. I don’t eat their sausage or beef a whole lot cause it’s so processed, but it’s a nice treat every now and then. Their beef makes the best and easiest veggie burger.
