Popsicle Season
As the temperature creeps higher and higher here in Raleigh, I find myself getting increasingly creative to find ways to stay cool—I chew on ice cubes, I purposely run through sprinklers on my morning run, I even occasionally pop my head in the freezer for a few moments at a time.
However, amidst rummaging through my cabinet of small appliances (yes, they occupy an entire cabinet), I stumbled upon a Christmas present that I haven’t yet used—the popsicle maker from my sister Lea.
Eureka! An easy and delicious means of staying cool without blasting the AC! However, I have zero experience in popsicle-making, so I am in need of some recipe inspiration…and that’s where you come in!
What are your favorite popsicle flavors? Have you ever made them yourself? In general, I love good ol’ banana-bloob and choco-coconut combinations, so perhaps I can dream up a popsicle recipe or two featuring those flavors…Feel free to share recipe links in the comments!
Onto the grub!
It’s been awhile since my last batch of savory oats, so I re-kindled my passion for the salty cereal this morning. Fried egg and avocado is one glorious combination, my friends.
For lunch, I made an Ellie recipe, the White Bean and Roasted Garlic Dip.
My only tweak:
-I garnished with fresh basil instead of parsley because a certain canine managed to clear out the parsley supply from my herb garden.
Despite having seen Food Network chefs do it countless times, I’ve never actually roasted garlic myself. The transformation is nothing short of magical—the garlic goes from the usual sharp-tasting bulb to a sweet and soft mash. It was hard to keep myself from eating the whole bulb before any of it even got into the dip! The overall flavor of the dip was deliciously creamy and rich, and there wasn’t even that much oil. I’ll remember this recipe for the next time I need a party appetizer!
Tonight’s dinner was an old recipe of my own, Spicy Peanut Butter Coconut Tofu. The peanut sauce really didn’t want to stick to the tofu tonight, but it turned out tasty enough. I served it atop a bed of zucchini noodles (leftover from yesterday’s video demonstration).

Your recipes are so inventive! And yes…you really must serve your white bean dip at a party. I make it at pretty much all of mine and everyone goes bananas. Plus, it’s SO cheap to make!!

I’ve never liked popsicles, even as a little kid… I know–BLASPHEMY. But I’m definately more of a creamy girl when it comes to my cool desserts… give me some frozen yogurt any day! I use white beans now for all my hummuses (hummi?) I think the flavor’s really great, and they’re nutritionally superior to chickpeas (more protein/fiber, at least in the brand I buy!)
Roasted garlic IS amazing, isn’t it?! After I first tried roasting it over a year ago, I couldn’t believe I’d never done it before.
It’s such a great treat, drizzled with a little bit of EVOO and eaten all on its own… or you can smash it on some toast for garlic bread, too!
I swear I thought your dinner was actually sitting directly ON your table in the last picture, at first glance… I was thinking “how did she do that without the noodles falling through?!”, haha. Nice glass plate though!
I just like puréeing fruit and pouring the result into popsicle moulds and freezing them.
I didn’t eat a lot of them as a kid, but I don’t mind them… I agree with Marissa in that I’d take froyo [or ice cream] over a popsicle any day. Blueberries are my favourite berry, but for popsicles, raspberry is my favourite!

Agreed–I think frozen yogurt would win over any other frozen treat in my book too!
Weight Watchers magazine had a whole article devoted to popsicles with some pretty unique flavors! Like strawberry/basil and such. It’s worth checkin’ out their website to see if they posted them there, they looked tasty
your food is BEYOND beautiful! that bowl of savory oatbran with avocado and egg..wow…I still havent gotten around to ‘love’ the idea of savory style oats, but that just put it over the top!
I also have really been loving coconut oil lately and cant wait to try it in new recipes!
