Priorities

Good morning blogland! I write to you this morning about half a day late—I had plans of posting as per usual last night, but life kind of got in the way. In essence, I was overwhelmed both intellectually and emotionally by homework; my exciting Friday night was spent stressing over chemistry and statistics homework.

Sigh. I miss my undergraduate days, when my homework consisted of reading novels.

Although I usually make blogging a priority and set aside time for it, this was one situation in which schoolwork won over foodie enjoyment.

When you’re short on time, what are the first things on your to-do list that you put off for later? For me, it’s usually housework. The dishes can wait!

Here’s a look at my day of eats:

A few Christmases ago, I received a pretty awesome waffle-maker. Sadly, it hasn’t gotten much use of late—I’ve been grooving on pancakes instead. However, yesterday I dug it out of my cupboards and made a batch of whole wheat protein waffles (using Susan’s pancake recipe). It ended up making quite a mess, as I seriously overfilled the iron. (Translation: batter all over the counter). ‘Twas a tasty mess, nonetheless.

After doing my weekly shopping for the foods lab, I came home and made a rather fantastic salad. Tempeh bacon, avocado, and hard-boiled eggs? Yes, please.

For dinner, I had grandiose plans of making Ellie’s Mushroom, Onion, and Basil Pizza

…but then homework anxiety took over. Around 9PM, Seth insisted that I eat something, so I just put together a quick meal. Don’t worry—I plan on getting around to making that pizza tonight:)

Alright, off to tackle some more homework (gotta love midterms!). I plan on rewarding myself with a trip to Costco later:) Happy Saturday, everyone!

  1. your salad looks amazing!! I understand the overwhelming homework– i am avoiding mine right now!! I can’t wait to read about your pizza tonight! :)

  2. Ugh I completely understand about homework stress. Around exam time I just ignore everything else and just go for it. My eats don’t look half as appetising when I’m hard at study though. That salad looks yummy!!
Hope you get a chance to relax soon though.

  3. ahh your simple sammie and hummus plate is EXACTLY what im craving righ tnow!

  4. The first thing that goes out the window for me is cleaning!

  5. Wow, your salad looks totally delicious!
You are completely excused for not blogging or making the pizza Caroline, chemistry homework truly depletes any person’s energy (or at least it did deplete mine, I so get your anxiety over it…)
At least are you enjoying NC State?
    Ana

  6. Ugh…totally understand the homework blues. It always seems to mount up, all at the same time. Hang in there!

Your waffles look amazing. I haven’t had any in ages, and I think it’s about time I changed that. :D

  7. Hope the homework stress goes away soon!

  8. HAHA omg story of my life- 50 million ingredients purchased, grandiose dinner plans…..and stress and starvation lead to the quickest combo i can shove in my mouth! Oh well, it’s only a day away….better to spend time and enjoy it :D Good luck with everything girlie, i’m glad Seth is there to regulate ;D

  9. I always do the dishes real quick, so it’s not so much as a priority rather than a habit.

Cooking takes a backseat though, and I start eating more canned soup and take-outs. :)

  10. housework and blogging are first thing to go, unfortunately :(

  11. Same here – housework is the first thing that gets chucked off my list of priorities in favour of homework.

Organic chemistry should NOT have to be such a torturous subject… Hollah if you need help, eh? And of course, not making the pizza is totally excusable! It’s commendable that you actually keep making meals in the midst of everything – a lot of people just head for take-out!

Best of luck with midterms, homework, and O-chem!

  12. Waffle irons are so much fun! However, my priorities ARE the dishes, not being in school anymore. Do you have any tips on how to clean the darn thing? I can’t get in all those little grooves so easily.

  13. So apparently we’re both spammers so I thought I would come by and comment. A bird told me that both of our comments we being filtered so we can just be in a club or something now.

Have fun at costco! that is always a treat

  14. I’m with you on that one! Housework is always the first to go!

  15. Housework always takes a back seat… even when I’m not tight on time ;)
