Problem Solved
A few days ago, I waxed poetic about how much I wanted a live-in fro-yo maker. Well, I didn’t hire YogurtLab employee…but I discovered something almost as good.
Banana soft serve. Duh.
I know, I know—I’m about a year late on this homemade dessert trend. Way back when Gena’s creation was taking the blog world by storm, I never seemed to have any bananas around to freeze (a thrice weekly banana oat bran habit will pretty much kill your banana stash). However, in recent weeks I’ve found myself with an abundance of naners, so I finally seized the opportunity to try soft serve for myself.
[I had a gorgeous photo of a mound of said soft serve with coconut butter and chocolate chips, but my camera ate it]
Magical, I tell you.
So tell me—have you tried the legendary banana soft serve? What are your favorite toppings?
Although I would like to subsist on banana soft serve alone, I ate a few other things today.
First up on today’s menu was an Ellie recipe, her Blueberry Blast Smoothie.
My tweaks:
-I used agave nectar instead of honey.
-I substituted Greek yogurt for regular non-fat yogurt.
-Unsweetened almond milk went into the mix instead of non-fat milk.
While this morning beverage was pretty and plenty nutritious, it was a snooze-fest. There was nothing special about this recipe. Not even a speck of vanilla extract to spice things up!

Amidst my epic day, I packed a tofu-tastic lunch.
Tonight’s dinner was a recipe from the February 2011 issue of Clean Eating, Barley & Apple Stuffed Squash. I added chickpeas for a dose of protein, and I was quite pleased with the end result. I need to eat barley more often!
Alright, I have some research to do. Good night!

I can’t believe you’re just jumping on the banana soft serve movement. It’s amazeballs and rawtastic.
I just recently made her fro-yo fir the first time too! I added in some dark chocolate chips. AMAZING>
I just bought a box of barley and have half a left over acorn squash… my need to plan everything thanks you!
wait. i JUST saw this… it’s JUST bananas? really?!
I’ve definitely made banana soft serve, but I’m with you on that I never have enough bananas around to freeze! If I do, I like to save them to have around fresh…..
I made CE barley + apple stuffed squash, as well. A bit boring, and non- original to me, but alright.
You are not the only one who just tried the banana soft, I haven’t yet. Shame on me!
How do u keep up the recipes? I mean how do u organize to make those recipes that you saved?
i tried nanner soft serve once but it tasted kind of odd!! i think my banana was off!
Love banana softserve! I like adding cocoa powder or chocolate to it, so it becomes chocolate banana softserve!
I love banana soft serve so much, but it’s been absent from my life since I broke my food processor making almond butter! So sad. I wonder if I can improvise with a blender . . .
And you’ve probable seen it already, but Dreena Burton has an amazing soft-serveish recipe in Eat, Drink and Be Vegan incorporating cashew butter. Worth a try!
i HAVENT HAD BANANA SOFT SERVE YET!
you have to look at this link it’s an Ellie recipe on food network and all the hilarious comments about it. You will definitley laugh.

I haven’t actually tried banana soft serve yet… My freezer is always packed with a variety of other things, so there’s never any space to freeze ‘nanas.
I think I’m going to have to now, though! Little Bookworm’s idea of adding cocoa powder sounds awesome. I bet it would taste amazing with PB mixed in too! (Choco-PB-banana soft serve!?)
Yay for stuffed squash! Looks amazing as usual.
that stuffed acorn squash looks amazing!!! And banana soft serve has been my breakfast the past like 3 weeks! lol
love banana softserv with peanut butter mixed in.
