Productive Relaxation

Today was relaxing…but productive at the same time:

1. I picked out a recipe to try…as part of an upcoming cookbook review.

2. I frolicked through the aisles of SuperTarget and Hobby Lobby…to find the perfect wrapping paper for my gifts.

3. I watched Home Alone with Katie and Rainer…while making some reindeer cookies.

All in all, today was the perfect balance of chill time and getting a few things accomplished. What did you accomplish today?

Monday

Sorry for the smoothie monotony…I’ve decided that I really dig this strawberry-chocolate chili combo.

Tuesday

I made the silly decision to wear shorts for my run outside this morning. Poor choice on Caroline’s part. Needless to say, I was quite chilly by the time I returned…the warmth of oatmeal was very necessary.

For lunch, I busted out my copy of Tal Ronnen’s The Conscious Cook and decided to make the California Gardein “Chicken” Salad. I did not have any Gardein (a vegan chicken substitute), so I used a diced Quorn turk’y burger instead. Delish!

By the time I returned home from my afternoon with Katie, I was pretty hangry. I made a “dump and heat” meal, using canned black-eyed peas, plus tomatoes and okra.

Now I am off to wrap a few presents, one of my favorite pastimes (no matter the season!). Good night, all!

  1. I took a final and wrote half of the last paper I have to work on. I didn’t even run today but that has made me so much more exhausted.
    And never a need to be sorry for chocolate strawberry monotony :-)

  5. Sounds like an awesome day in my book! You reminded me that I have to get busy wrapping. I am almost all done buying but haven’t wrapped a single one yet! That wrap looks amazingly beautiful! Nice job, it’s hard to get a wrap to look good.

  6. The “chicken” salad looks reallyyyy good. You’re meals always seem perfectly balanced- fruit, vegetables, whole grains, protein…Just curious, is this for purposes of the blog? Do you ever just crave veggies at one meal and beans at the next?

  9. Have you tried Gardein before? You and I have similar tastes so I wanted to know if you liked it or not. I haven’t tried it but I hope to soon!

    i totally agree that great pics are essential in a good cookbook! it makes me want to make the recipe that much more!
