Re-inspired

It finally happened…I got my culinary mojo back! You may have noticed that in recent weeks my eating has been a tad repetitive. Indeed, the Broccoli Hut has read a bit like this: scrambled tofu, hummus, repeat. After about two months of dietary monotony, however, I finally got the creative urge to cook today. I pulled out a few cookbooks (e.g., The Everyday Vegan, Imus Ranch Cookbook, etc.) from my ever-expanding collection and picked out a few recipes with which to experiment this week. Get excited for a few new dishes to appear in upcoming posts!

What was the last new dish you made? I’m always looking for more inspiration:)

In looking over my eats from the day, everything is oddly…soupy. Take a look at my spoonable meals…

Nothing creative about breakfast, but it was still quite nutrient-packed, nonetheless. My oat bran was thicker than usual this morning—it was just a bowl of sweet, glorious goo.

Leftover gazpacho was on the menu today. Never one for boring leftovers, I couldn’t resist adding a few ingredients to re-invent last night’s dinner.

Dinner featured Spicy Thai Stew, a recipe from The Everyday Vegan. Ever the recipe rebel, I substituted a few ingredients (cashew butter for almond butter; zucchini for bell peppers) and added tofu for protein. I loved the flavor, and it was the perfect use for the chard I bought on Saturday. Yum.

  3. I’ve been in a cooking slump lately too. It’s hard when my dad cooks–I feel bad making my own dealio.

    about the so-called “cooking slump.” Can’t wait to see what new goodies you have in store for everyone!

    Let’s see…last new thing I made was a cottage cheese soft serve sort of thing. My favorite is 1/2 c sliced frozen strawberries, 1 frozen and chunked banana, a -shake- -shake- -shake!- of cinnamon ( ;] ), and 1/2 c cottage cheese blended in the food processor, usually with about 2 T or so of liquid dashed in for blendability purposes. I like to top the entire thing with fat free Reddi Whip. <3

  7. Spicy thai stew sounds sooo good! glad you got your cooking mojo back :) I find during the summer, I cook less…I seek out cold and crispy foods!

  8. I like your thai stew and the way you reinvented the gazpacho too, looks so good!
    Lately I have been inspired in the kitchen, and one of the recipes I made that everyone loved here at home was the Portobello Mushroom Ragu from the May/June 2010 issue of Clean Eating. It was so easy to make and really delicious, plus it freezes well (yes, I tested!!), it is a good recipes to make and keep leftovers for later on.
    I also made some lentil recipes this week (have been on a lentil kick!), and a pasta salad full of veggies and ricotta. I posted about all of them on my blog, you can take a look there if you would like Caroline!

  9. I’ve been really digging cream cheese lately…i don’t know why! One new thing I tried with it, though, that turned out really really delicious was a (cold!) sliced apple, some cream cheese, and some cinnamon all on a whole wheat tortilla quesadilla style. It’s also super super tasty grilled like a panini!

  10. I definitely go through stages where I could care less about creating interesting dishes. I think your Thai Stew looks delicious, I am planning on thai food tonight so I think it just got me excited! :)

  11. I’ve never really been much of a cook… I’m more of a “put things together” type of chef, hahah. You know, big salads, yogurt bowls, snack platers… that kind of stuff is more my speed! I hope to change that this summer.

    The best recipe, in my opinion, ever invented is Susan’s at The Great Balancing Act’s Dairyfree-ish Protein Pancakes! They’re magical; so good, and so healthy!

    ugh i’ve been SUCH a repitition whore lately (excuse my french haha) so eggs and oatmeal and boring (but so delicious) salads have been it haha

  15. Ack, I can’t even remember the last “fancy” dish I made…I’ve been eating out most of the time! I hope you come up with more colorful and delicious dishes though! :-)

    I’m not sure what the last recipe I made was. Perhaps the mango sesame salad dressing last week? It was really good too :) But I definitely don’t use my cookbooks as much as a should – I have so many!
