Ready, Set, Go Vegan!
Some of you may recall that in the early days of my blog, I experimented with veganism. However, I discovered the long-term effects of the diet left me feeling weak and concerned about my already potentially compromised bones. As a result, I added some dairy back into my diet. Thus the evolution of my diet into my current lacto-vegetarian mode of eating—somewhere between vegan and vegetarian.
Anyway, I recently received an e-mail from Katy of Silly Tater Tot , telling me about her and Michelle’s endeavor to go vegan for the week of November 16th-23rd. They are encouraging food bloggers everywhere to dabble in veganism as well on Thursday, November 19th in one of the following ways:
- Choose one meal to be vegan
- Eat one vegan meal out
- Eat vegan for the entire day
I make a point of eating at least two meals per day vegan, so I am more than willing to participate. If you’re pressed for vegan meal ideas, check out my recipe page, my cookbook video, or check out my breakfast and lunch from today…
Thursday
Triple P: peaches, pineapple, and pumpkin granola. AMAZING.
Friday
SIAB again, this time with pineapple and banana. If you’re curious as to why this concoction has a slight green tinge, you can blame it on the spirulina.
Before heading out to my last tutoring appointment EVER, I used up some of my leftover lentil loaf from Tuesday to make a hearty sandwich.
A few weeks ago, I saw Marianne make a batch of tofu sticks, as inspired by Lucky Taste Buds. I liked the idea, but I inevitably made my own adjustments: 1) Crushed Weetabix instead of panko.2) agave-sweetened mustard instead of BBQ.3) added kelp granules to the breading mixture for a little fishy flavah. The end result was pretty awesome, although next time I’ll be sure to have some condiments around for dippage. Side note: Ever since we discussed the shortage of selenium in the American diet in one of my classes (the one with the nutty professor), I’ve been on a Brazil nut kick—one ounce has 780% of the RDA!

Hello and welcome! I have created this blog for people who love food, especially healthful, vegetarian food.
I currently attend college in North Carolina, where I am studying English and psychology, although I plan on pursuing an additional degree in nutrition after I graduate. Ideally, I would like to combine my love of food and the written word someday as a health writer.


Great challenge! I might have to do another vegan day. I’ll need to stock up on soy yogurt first though, haha

hmm, a vegan day sounds like a great idea! I’m trying to omit dairy as far as possible (although there are exceptions like my dad’s b-day cake yesterday) so I might try to eat completely vegan on thursday! so fun!!!

Good luck with the vegan diet again. Just wondering, what’s your motivation? Is it for ethical reasons or do you just like the way it makes you feel.
Awesome challenge! I went vegan for the entire month of October after experimenting a bit in September and I feel great. Can’t wait to see what meals you girls come up with
Love the vegan challenge! I may need to try that — it sounds like it would be really fun and interesting! Many days I find that I am pretty much eating vegan anyway plus or minus some easy adjustments, so it shouldn’t be too difficult

I was never really a fan of brazil nuts, but i have been thinking about tuna recently, maybe i do need some more selinium in the diet.
I think that is a good way to eat, two on-one off kinda thing. I pretty much only dont eat vegan when i go out somewhere. cooking for myself…. vegan-hoooo!
I don’t think I could ever be vegan given my addiction to yogurt!! Plus my protein intake would drop by about 80%!!

I don’t know if I could ever go vegan, but I’m definitely leaning more toward vegetarianism these days.
Your smoothies always look so good! I’m always so cold in the mornings, though, that I end up eating oatmeal.

Thanks so much for the shoutout! I went shopping today for some vegan must-haves and was pleasantly surprised to find out that I didn’t need too much that I don’t normally buy!
I have a batch of granole in the oven and plans to do some sprouting tomorrow. I’m so thrilled to have your support!
I want to try both the lentil loaf and the tofu sticks. Such great eats! I find myself more and more in the vegan but but do get extremely nervous about the calcium issue. Happy Saturday night!

I am from Brazil and believe it or not I don’t like Brazil nuts… that and macadamia are the only ones I don’t like, all other nuts I like very much. My husband and my sister though love the Brazil nuts, it is their favorite.
By the way, you would be the happiest person if you lived in Brazil, vegetables there are always fresh, plentiful and cheap, making it an ideal place for vegetarians! When I visit family I always eat tons of fruits and veggies, especially the ones I can’t find here like guava and passion fruit (which I love!), oh and mangoes, seriously, people here in the US don’t know what a good mango is… I love Whole Foods or Trader Joes frozen mango chunks (when they are orangeyish and sweet), but a perfectly ripe mango, right from the tree is heaven, and that unfortunately we can’t find around here (or at least I haven’t had good luck with fresh mangoes I bought here yet…)

I bet the mustard tofu sticks were delicious. I think you could probably try a multitude of condiments on them. Maybe even spicy peanut butter?
They definitely require dippage into something, that’s for sure.
