Ready to Rock

I have arrived back in Durham and have (almost) completed my checklist before classes start. Obligatory trip to Target? Check. Dinner at Elmo‘s with the parents? Check. Obsessive decoration of the apartment? Check. All that’s left is the inaugural visit to Whole Foods (which is on the agenda for tomorrow). While it’s never fun to see summer come to an end, I am excited for my classes, many of which are nutrition-related, as well as my new living arrangement with Alanna. May this year be the icing on the cake…er dressing on the salad.

As my end-of-summer celebratory shake, I whipped up one of my faves: choco-straw-nana.

Saturday

In anticipation of a busy morning of packing up the car, I prepared some overnight oats on Friday evening. It was delicious but not nearly as filling as my usual oat concoctions. Maybe next time I should add some yogurt?

Midway through our journey, we stopped at Rising Roll for lunch. I ordered the Garden Veggie panini (sans cheese and mayo), plus a garden salad. The guacamole was spicy and delicious, and the panini bread was pillowy soft. While the food was tasty, it was not worth the 20 minutes that it took for us to receive our food. Plus, their takeout packaging was less than adequate; a paper tray with saran wrap over the top hardly qualifies as an easily transportable container. Bottom line: Rising Roll=not ideal for diners on-the-go. Bonus points for the free pickle, though:)CIMG0692

CIMG0688Once the car had been unloaded, we were all starving. Off to Elmo‘s we went, where I ordered their luscious vegetarian chili and a small spinach salad. I guess I should have ordered something more, because I was still hungry when we left!

Sunday

It’s not Sunday morning without oatmeal. I topped this batch with one of my TJ’s goodies that I’ve been saving from my trip to Chicago.

  9. You made it! If only food points could be used at the WF salad bar, huh? Although the $1200 central plan will help in that arena for sure. We definitely need to schedule some meals together once we get settled in.

  14. What am I looking forward to? Probably my marathon. It’s all that’s been on my mind. I’m also looking forward to meeting new people and seeing new sights over in Flint when I move in.

  19. YEAH Goodluck on your first day of school!! I can tell by this post that you are pumped and ready! I didn’t do anything too crazy this summer either…but it was still a nice summer! Hope your lovin your new roommate/living situation!

  21. Oooh, I wanted to take a nutrition class this semester, but it was full! I’m looking forward to my fall schedule of having no class on Thursday or Friday x) even if that means more intense Mon-Wed.

  23. Your oatmeal packet/nuked apple/almond butter/cinn breakfast is righttt up my alley. Had some variation of that every morning since getting back to school. :)
