Recipe: Acorn Squash Soup

acornsoup Serves 1

Ingredients:

1/2 small acorn squash

1/2 yellow onion

2 stalks celery (optional)

1 c vegetable broth

Garlic salt, to taste

Method

1. Pre heat oven to 375*. After scooping out the seeds, place the acorn squash on a lightly oiled baking sheet. Bake for 15 minutes or until tender.

2. While squash is baking, cook onions and celery in a medium saucepan over medium heat.

3. Once the squash is tender, add it to the saucepan with the other vegetables. Add vegetable stock and garlic salt.

4. Using a hand blender, puree the vegetables until smooth.

5. Bring to simmer until it reaches your desired consistency.

Enjoy!

Notes:

-I like to use sweet onions for this recipe to complement the sweetness of the squash, but any yellow or white onion will do.

-Rather than using boxed broth, I use a dried veggie powder that becomes broth once water is added; this cuts down on the sodium content considerably.

-I sometimes like to add raw cashews on top for crunch. Get creative with your favorite nuts and seeds!

  5. Roast an apple with your squash and add it to your soup, it is amazingly good, I love acorn squash and apple soup!
    It is the same principle of the sweet onion, the apple complements the squash sweetness beautifully!

  11. Great looking recipe and why have I never thought of the topping option before? Of course it makes perfect sense to put some kind of nuts on top. My Mom is actually bringing a carrot ginger soup to me this weekend so I am getting all tasted up for a creamy orange soup looking at this beautiful pic.
