Recipe: Acorn Squash Soup
Ingredients:
1/2 small acorn squash
1/2 yellow onion
2 stalks celery (optional)
1 c vegetable broth
Garlic salt, to taste
Method
1. Pre heat oven to 375*. After scooping out the seeds, place the acorn squash on a lightly oiled baking sheet. Bake for 15 minutes or until tender.
2. While squash is baking, cook onions and celery in a medium saucepan over medium heat.
3. Once the squash is tender, add it to the saucepan with the other vegetables. Add vegetable stock and garlic salt.
4. Using a hand blender, puree the vegetables until smooth.
5. Bring to simmer until it reaches your desired consistency.
Enjoy!
Notes:
-I like to use sweet onions for this recipe to complement the sweetness of the squash, but any yellow or white onion will do.
-Rather than using boxed broth, I use a dried veggie powder that becomes broth once water is added; this cuts down on the sodium content considerably.
-I sometimes like to add raw cashews on top for crunch. Get creative with your favorite nuts and seeds!

Hello and welcome! I have created this blog for people who love food, especially healthful, vegetarian food.
I currently attend college in North Carolina, where I am studying English and psychology, although I plan on pursuing an additional degree in nutrition after I graduate. Ideally, I would like to combine my love of food and the written word someday as a health writer.

That looks great and simple, thanks for sharing! I’ll have to try this out as soon as I get a hand blender.
Mmm sounds delish!
mmmm you know I’m all for this! I=acorn squash obsessed!
That sounds fantastic Chef Caroline! Best part? That it serves one
Roast an apple with your squash and add it to your soup, it is amazingly good, I love acorn squash and apple soup!
It is the same principle of the sweet onion, the apple complements the squash sweetness beautifully!
Yum!

Love it! I often eat this with bread and warm goat cheese, mmm!

Delicious looking soup!
Great looking recipe and why have I never thought of the topping option before? Of course it makes perfect sense to put some kind of nuts on top. My Mom is actually bringing a carrot ginger soup to me this weekend so I am getting all tasted up for a creamy orange soup looking at this beautiful pic.
Love pureed soups and finding new things to do with squash. Great post!
what an amazingly delicious recipe!! thanks girl
