Recipe: Apple-Cranberry Slaw

Apple-Cranberry Slaw
(Serves 1)
Ingredients
Dressing
- 1 T Dijon mustard
- 1 T rice vinegar
- 1 tsp fresh grated ginger
- 1 tsp. sweetener (e.g., honey or stevia extract)
Slaw
- 3 oz. broccoli slaw
- 1 medium Braeburn apple, diced
- 1 T dried cranberries
Method
1. In a small bowl, whisk together mustard, vinegar, ginger, and sweetener.
2. In a large bowl, combine broccoli slaw, apple, and cranberries with the dressing. Serve immediately or store in the refrigerator, covered.
Notes:
-Broccoli slaw is available in any grocery’s produce section, However, if you prefer you can shred your own broccoli stalks and carrots with a large food processor.
-I prefer Braeburn apples in this recipe, but you can use any apple you like, or even a diced pear instead.

I love apples and cranberries and I bet they make a wonderful addition to slaw. I also love the sound of your dressing for this slaw. I’ll have to check and see if I can find broccoli slaw here. If not out come my trusty food processor.
Sometimes I kind of wish I ate fish, because I know it’s good for you! But it just kind of freaks me out, just like meat!!

I love The Ellie Project! She is fantastic, I have always enjoyed her show too:) This recipe is wonderful! I am excited for Spring and Summer, because then I can start making fun salads:)

I just made this and it was wonderful! I substituted in apple cider vinegar for the rice vinegar & used dijon mustard with horseradish in it for an extra kick. (Mostly because that is what I have in the fridge).
Also, I put some lemon juice on the apple pieces so they will be fresh in my lunch tomorrow.
