Recipe: Artichoke Hummus

Artichoke Hummus

(Makes 1/2 cup)

  • 1 cup canned chickpeas/garbanzos
  • 1/2 cup canned artichoke hearts, quarters, or pieces, drained
  • juice 1/2 small lemon
  • 2 T. tahini
  • 1 clove garlic, minced
  • 1 T. fresh oregano (or 1 t. dried oregano)
  • salt, to taste

Notes:

-Tastes like pizza!

-Feel free to use fresh oregano, just be sure to increase the amount to about 1 tablespoon.

-You may also substitute fresh artichokes for canned, but I find them to be excessively labor-intensive to prepare! Frozen artichokes are ideal for this recipe if you can find them.
