Banana-Coconut Breakfast Pudding

This recipe is based on Chocolate-Covered Katie’s Banana Bread in a Bowl recipe. Although her recipe is perfectly delectable, I decided to put my own twist on it using my favorite cereal and a few other tasty ingredients.

  1. Caroline, I’m dying here! I am trying to resist buying coconut because I just eat it up so fast (by putting it on EVERYTHING), but this recipe is making that pretty darn difficult!
But anyway. This sounds absolutely delicious. I would do almonds or almond butter for the nuts, because banana + coconut + almond = flava HEAVEN.

  2. You don’t add any water or milk to this? I bet coconut milk would be amazing!

  3. Sounds and looks divine, m’dear :) A new twist on a blogger favorite!

  4. awesome! i am definatly going to try this!

  5. I can’t wait to try this, I love banana bread.

  6. Oops! Good catch, Shelby. There is 1 cup of non-dairy milk!

  7. sounds delish~~~

  8. Mmm the coconut toppings shouldn’t be optional ;) Great twist on the classic recipe, thanks!

  9. Coconut banana?! *Swoons*

P.S. Just sent you an email, m’dear.

  10. Oh my, this looks good!

  11. Ummm, of course I’d love to have that – hello coconut! It might actually prompt me to buy the regular Kashi GoLean. I’ve only ever tried the Crunch.

  12. [...] Banana Blender Cereal morning. This morning’s rendition is precisely the recipe I posted here. Cool fact about coconut butter: when slightly chilled, it hardens into a solid mass (or what I [...]

  13. I know this is an old post but I just caught wind of your fun blog yesterday! I tried this recipe this morning and i am already dreaming of eating it tomorrow morning! It is sooo good and filling! I do have 1 question though. I have Nutiva Brand Coconut Oil but I dont know of this coconut butter you speak of, can you elaborate? thanks a heap

  14. Mmm. I love banana and coconut together. Looks so delicious!
And yes, I feel the same way about Hungry Girl. I was a little turned off by some of the recipes that had so many artificial ingredients. But I will always be indebted to her for re-introducing Shirataki noodles to me! (I grew up with them, but eat them so much — I can only eat them with Asian flavors — doesn’t seem “right” to eat them with cheese!)
