Recipe: Banana-Coconut Breakfast Pudding

This recipe is based on Chocolate-Covered Katie’s Banana Bread in a Bowl recipe. Although her recipe is perfectly delectable, you all know I am quite the recipe rebel. Hence, I whipped up a re-vamped version of Katie’s fabulous original. The end result is just like pudding!
Banana-Coconut Blender Cereal
(Serves 1)
Ingredients:
- 1 cup Kashi GoLean cereal
- 2 T. nuts, such as almonds, walnuts, or cashews
- 1 medium frozen banana
- 1 cup non-dairy milk, such as almond-, hemp-, or rice milk
- 1/2 t. coconut extract
- dash of cinnamon
- shredded coconut (optional)
- coconut butter (optional)
Place all ingredients except the optional shredded coconut and coconut butter. Pour into a bowl and top with the aforementioned coconut-y toppings, if desired. Dig in!

Caroline, I’m dying here! I am trying to resist buying coconut because I just eat it up so fast (by putting it on EVERYTHING), but this recipe is making that pretty darn difficult!
But anyway. This sounds absolutely delicious. I would do almonds or almond butter for the nuts, because banana + coconut + almond = flava HEAVEN.
You don’t add any water or milk to this? I bet coconut milk would be amazing!

I know this is an old post but I just caught wind of your fun blog yesterday! I tried this recipe this morning and i am already dreaming of eating it tomorrow morning! It is sooo good and filling! I do have 1 question though. I have Nutiva Brand Coconut Oil but I dont know of this coconut butter you speak of, can you elaborate? thanks a heap
Mmm. I love banana and coconut together. Looks so delicious!
And yes, I feel the same way about Hungry Girl. I was a little turned off by some of the recipes that had so many artificial ingredients. But I will always be indebted to her for re-introducing Shirataki noodles to me! (I grew up with them, but eat them so much — I can only eat them with Asian flavors — doesn’t seem “right” to eat them with cheese!)
