Recipe: Banana Fingers

Considering my love of Clif Z Bars, Clifford Crunch cereal, and any kind of finger-food,  it’s no secret that I enjoy kid food. Perhaps one of the reasons I love kid food so much is that it is often tasty AND fun to eat. The recipe below is just that–a delicious breakfast or snack that  involves eating with your fingers:)

Banana Fingers

Serves 1

Ingredients:

  • 1 medium banana
  • 1 container of your favorite yogurt flavor (I use a 6 0z. size)
  • 3/4 cup of your favorite cereal
  • 1-2 T. nut butter
  • assorted yogurt mix-ins

1. Place yogurt in a shallow bowl.

2. Place cereal in a food storage bag, making sure to exclude as much air as possible. Crush the cereal to desired texture, then transfer to a shallow bowl or large plate.

3. Peel banana and carefully slice it in half, lengthwise. Cut each half in two, so that you have four “fingers.”

4. Dip each banana in yogurt, using a spoon to cover all surfaces if necessary.

5. Transfer each yogurt-covered banana finger to the cereal plate and roll until completely coated. Beware that this makes for messy hands!

5. Serve with your favorite nut butter and enjoy!

Notes:

*I use plain yogurt for this recipe, which I flavor with various extracts and spices before coating the banana fingers. My favorite combination is vanilla extract, agave nectar, and cinnamon.

*My preferred cereals are GoLean (duh), PB Bumpers (pairs fabulously with banana!), or any type of flaked cereal.

*Creamy nut butters work best as a dip with this recipe; chunky varieties make dunking a tad more difficult.bf5

*There will be leftover yogurt and cereal. I usually combine the excess components and enjoy it as a side dish.bf6

    Isn’t there cocoa bumpers as well? Those would be good too I’d imagine!

    I’d probably use greek yogurt, a mix of Annie’s chocolate & vanilla bunnies or honey kix, and mighty maple PB! Mmmm

  4. ah i love golean! i just had a small cup with dried cranberries for my after dindin dessert ;) your banana fingers remind me of girl scout camp where we made banana boats on campfires with a warm banana, chocolate sauce and rice crispies (sometimes marshmallows too!) haha.. i Love your idea though.. i would prob add dark chocolate dreams pb :)
