Recipe: Butternut Squash Pizza

Butternut Squash Pizza
(Serves 1-2)
Ingredients
- 1 large (8-10 inch diameter) whole wheat tortilla
- 1.5 oz. reduced-fat soft cheese, such as Laughing Cow Creamy Swiss
- 1/2 tsp. dried thyme
- 1/2 tsp. dried basil
- 1/4 tsp. red pepper flakes
- 1/3 cup white onion, diced or slivered
- 1 cup butternut squash, cubed
- 1 oz. reduced-fat mozzarella cheese
Method
1. Preheat oven to 375 degrees (F).
2. Place butternut squash and onions in a steamer basket cook until slightly tender. Alternatively, you can place the vegetables in the microwave for 1-2 minutes. Set aside.
2. Lay tortilla on baking sheet, and spread it with soft cheese. Sprinkle with herbs and pepper flakes.
3. Layer on cooked vegetables, followed by mozzarella.
4. Bake in pre-heated oven for 12-15 minutes, or until edges of tortilla begin to brown and crisp.
5. Serve and enjoy!

Sounds yummy, conformting, and healthy! Would never have thought to put squash on my pizza but it makes perfect sense now! Thanks for sharing.
