Recipe: Citrus Vinaigrette

Citrus Vinaigrette

(Makes about 1/4 cup)

Ingredients

  • 3 T.orange juice, fresh preferred
  • 1 t orange zest
  • 1 T fresh lime juice
  • 1 t Dijon mustard
  • 1 t extra-virgin olive oil

Method

Place all ingredients in a small bowl and whisk vigorously until emulsified. Use as a marinade for tofu or a dressing for salad.

Note:

* I prefer the taste of fresh-squeezed orange juice, but juice from a carton may be substituted. I have tried this recipe with an orange-mango hybrid juice, it was quite tasty!
