Recipe: Dilled Egg Salad with Cucumber & Hummus

Ever since re-introducing eggs into my diet, I’ve quite enjoyed experimenting with eggs, particularly those of the hard-boiled variety. In all of my culinary investigation over the past few months, I’ve discovered a surprisingly delicious combination: hard-boiled eggs and hummus. Admittedly, I enjoy hummus more than the average person, but I think others will also find the duo satisfying to the palate in the form of this unique egg salad.

Dilled Egg Salad with Cucumber & Hummus

Serves 1-2

  • 3 eggs, hard-boiled and peeled
  • 1/3 cup seedless cucumber, diced
  • 2 T. fresh dill weed, minced
  • 2 T. prepared or homemade garlic hummus
  • salt, to taste

Method

1. If using egg yolks, chop whole eggs and place into a large bowl. If you prefer to omit the yolks, carefully cut around the yolks and twist apart the egg halves (as you would cut an avocado). Scoop out the yolks and chop remaining whites. Place in a large bowl.

2. Add remaining ingredients and stir well.

  1. this sounds delicious! i used your recipe for pumpkin hummus a while ago and i loved it more than store bought hummus! i just might have to make a batch of this! :)

  2. i actually make this all the time, but use fresh chives instead of dill, delish!
