Recipe: Edamummus

Edamummus

(Makes 1/2 cup)

  • 1/2 cup edamame
  • 1/4 12.3 oz. container of Mori-Nu silken tofu
  • 1 T. tahini
  • 1 garlic clove, minced
  • 1 t. ginger, grated
  • 1-2 T. water, to thin to desired consistency
  • a couple shakes cumin
  • salt, to taste

Notes:

-I used shelled edamame from frozen, but you can substitute fresh if it’s available.

-I have a particular love of cumin, so I included in this recipe, but if you’re not such a fan, feel free to omit it.
